Carrot Cake III

I have never made nor tried carrot cake before. This was very easy to make and turned out delicious! I followed gneebeanie suggestions although I did not add the crushed pineapple. I think I would add 1C. oil and 1/2C. applesauce the next time as I thought it could be a bit moister. I was told by my friends that this was the best carrot cake they had ever had! This is a definite keeper!

PHILADELPHIA Vanilla Mousse Cheesecake

My husband requested this for his birthday. This was only the second time that I have made a homemade cheesecake and it turned out heavenly. My hubby took the leftovers into work the next day and one of his co-workers said it was so good, that it was better than the "Cheesecake Factory" cheesecake. What a compliment!!!

Teena's Spicy Pesto Chicken and Pasta

Very good dish! Full of flavor. I didn't have the hot chile paste so I used hot pepper flakes to taste. Not a saucy dish, which is a nice change.

Roasted Chicken with Risotto and Caramelized Onions

Had very good flavor. This was my first time making and eating risotto so I wasn't sure if it came out right. It was very "gummy" and I'm not sure if risotto is suppose to be like that. If it is then it was delicious!

Crepes

Hubby requested these for breakfast for Father's Day. So simple to make. I did add 1 tsp. of vanilla. Hubby and daughter just had theirs with maple syrup but I spread cream cheese on them, rolled it up and topped it with fresh strawberries. So good!

Asian Chicken Salad

Very different and very yummy! Although hubby didn't care for it nor the dressing (thus the 4 stars). I followed the recipe but (as per other reviewers) added bean sprouts, baby corns, mandarin oranges. I left out the dried rice noodles and added the crunchy lo mein noodles. I also didn't have leftover chicken so I marinated chicken breasts in soy sauce, sesame oil (Just a touch! A little goes a long way!), ground ginger, garlic powder, vinegar and canola oil (I just eyeballed everything) for about 3 hours and then grilled it. Oh, I also used leaf lettuce instead of iceberg and I forgot to add the sesame seeds. I left the dressing on the side so people could add what they wanted. I'm bringing the rest in for lunch tomorrow! Thanks!

Salsa Chicken Burrito Filling

Very simple and easy to make. Hubby loved it! I did use chicken tenders instead of chicken breasts (they were on sale) and I also reduced the taco seasoning mix to 3 Tablespoons. Will make again. Thanks.

Tender 'n' Tangy Ribs

Very tender and tastey ribs! Definately fell of the bone. I did reduce the vinegar, even less than other reviewers, to 1/4 cup. I thought that would help with the sauce being watery, plus we don't care for vinegary BBQ sauce, but it didn't matter. The sauce still turned out very watery. Good flavor though.

Lemon Garlic Tilapia

Very good and simple recipe. I combined all the ingredients in a small bowl and then placed in the microwave for about 30 seconds or so, mixed well and then poured the mixture over the fish and baked as directed. Delish!

Curried Honey Mustard Chicken

If you love curry, you will love this. So simple to make! I didn't have time to marinate this for the full amount of time, only about an hour and it still had wonderful flavor. This was the first time I had exposed my family to curry and they didn't care for this unfortunately. If it was up to me I would make this over and over.

Sunday Chicken Supper

This was very easy to put together. I put the chicken on the bottom and the veggies on the top. Added a bit more spices, per other users. It only took 3-4 hours on low to cook though, so dinner was early that night. It was okay tasting, nothing special though. Sorry.

Grilled Bruschetta Chicken

I had made bruschetta the night before and used the leftovers on the chicken that I had marinated and grilled. Topped it with a little mozzerella cheese. Never thought of this until I saw this recipe. Thanks.
