Corn Casserole I

It was delicious and easy. I took it to a potluck and got some compliments. I added an extra cup of frozen corn and a cup of diced colorful sweet peppers. The only problem was that it didn't rise at all.

Unstuffed Cabbage Roll

It's delicious and so much easier than making stuffed rolls. I substituted seasoned salt plus a sprinkle of hot pepper flakes for some additional spice and heat.

Sour Cream Banana Bread

It's delicious. I substituted an equal measure of melted coconut oil instead of the butter, and cut down the sugar to 3/4 cup. I doubled the recipe and made two loaves, and they were done in an hour.

Tamale Pie I

I think it's delicious. I followed the other reviewers, and changed it a bit, or a lot, I suppose. I used the beef, tomatoes, and olives, and added some chile powder and Italian seasoning to the ground beef, a small can of enchilada sauce, a can of black beans, a handful of seeded and chopped serrano peppers, and frozen corn instead of creamed. I made a cornbread topping, but added a few teaspoons of cornmeal to the filling to help thicken it, and baked it according to directions. It's very tasty and I will take it to my next potluck.

Awesome Yogurt Biscuits

Cranberry Crunch Squares

I love this recipe because I usually have an extra can of cranberry sauce in the cupboard and it's a great way to use it. I used 1/2 whole wheat flour, 1/2 c chopped pecans, and half spread/half canola oil. I only had quick oats in the cupboard and maybe that's why it wasn't more crisp or held together better, but it's so good you could eat it with a spoon! Next time I will try regular rolled oats.

Cabbage Rolls II

My mother was of full German heritage and she used to make this dish. I like this recipe a lot and followed it pretty closely. I doubled it and it used about 2lbs of ground beef and maybe a little extra rice because it made 20 rolls, with meat mix left over, which I used to make little meatballs for Asian noodle soup with the cabbage broth cooked down. I added 4 cloves of garlic and a pinch of Italian herbs to the meat. Two 15 oz cans of tomato sauce more than covered the rolls and the recipe for the sauce was especially delicious.

Simple, easy, and delicious. I like that it doesn't have a heavy mayonnaise component, so that it's lighter and sweeter. I'm surprised that no salt is necessary.

Pumpkin Bread III

I substituted 1 1/2 c brown sugar and 1 c white sugar, cut 1/4 c oil and added 1/4 c additional water. I added 1/2 c chopped walnuts and 1/2 c raisins. I used a bundt pan and had enough to bake another medium loaf. It is a delicious recipe and I will use it again.

Apple Cake V

I had apple cake baked for a hundred at a big barbeque and looked for a recipe for quite a while. This was delicious and I've baked it twice already. The second time I cut some of the oil and sugar, substituted 1/3 whole wheat flour and added some wheat germ, and it was just as good and healthier. This will be a big favorite of mine.
