Chewy Chocolate Chip Oatmeal Cookies
This cookie recipe is delicious and worth every star. I forgot to read the reviews, so they did turn out flat, very much like a chewy lace cookie. I'm taking them to a potluck so I made a recipe and a half and I got LOTS of cookies. I did substitute quick steel-cut oats for more texture and used Baker's semisweet chocolate chunks too. Halfway through baking I did chill the rest of the dough and that helped, but next time I will add more flour and baking soda to help them rise more.

Pineapple Macadamia Nut Cake
It was very easy and delicious. I doubled the recipe to fit into a 9x13 cake pan with carry lid to take to a dinner. I cut back a little on the sugar because I thought it would be too sweet, but next time I'll add the full amount. VERY moist!

Amish Macaroni Salad
Delicious and easy. I usually just buy macaroni salad from the deli and go from there, but this time I used whole grain macaroni and made the dressing from scratch. Like others I cut down on the sugar but used sweet pickle relish instead for more sweetness. I used a 16 oz box of elbow macaroni but next time I will try bow ties. I cut the amount of dressing in half, and used mayonnaise, seasoned salt and celery seed but no celery. I also like macaroni salad with small cubes of white cheddar (1/4 pound) and 1 cup of defrosted frozen petite peas. It's only been chilling for a while but it tastes great. This recipe is very flexible and accomodates what you have on hand.
