Swedish Cream Wafers

This was a wonderful addition to my cookie repertoire. Instead of rolling my cookies out on a floured board, I rolled them out on a sugar sprinkled board. This eliminated the extra flour.

Nairobi Chocolate Cake

DELISH! Made this today just as written. I used my homemade chocolate buttercream icing to go with it. My husband wants this cake for his birthday & any other time I'm looking to bake something. "efzed", do you have any other treats that we might find scrumptious?

Cabbage Rolls II

One reviewer says to freeze the cabbage head to wilt it. DO NOT do this. You will end up with very tough and chewy leaves no matter how long you cook them. Also if you do them in the oven put a layer of the outer leaves on the bottom to keep the rolls from turning dark or burning. If you cut the spines off the leaves you can use these also for the bottom.

Pineapple Cheesecake Squares

When I made this I followed another members idea and made a graham wafer crust with the almonds & used 2 Tbsp cornstarch as the thickener for the topping. I didn't have any pineapple juice except for what I got out of the pineapple so I used freshly squeezed orange juice. This recipe is absolutely scrumptious even with the change in juices. You can still taste pineapple & not the juice. I can only imagine how great it would taste with pineapple juice.
