Tasty Buckwheat Pancakes

Great! I used kamut flakes instead of quick cook oats as that is what I had on hand. Soaked the kamut in the wet mixture for 5 minutes or so. Also, used 1/2 cup buckwheat and no white flour. Incidently, I think these would make a great base for a savory pancake with some sort of cream cheese, herb, garlic blend for a topping with a little dab of caviar...but that is just me!

Easy Homemade Vanilla Ice Cream

While very good, this does not freeze up quickly and will need to finish off in the freezer with stirring every 30 minutes or so to keep it from settling and getting rock hard. For that reason I rate it 4 stars.

Gelato

I added 1/4 cup of Hershey's Special Dark dry cocoa. It was exquisite. I used my KitchenAid professional mixer that has an ice cream attachment and the frozen ice cream bowl is perfect to make gelato as it does not incorporate air making the gelato taste as good as any traditional Italian gelato I have ever had. I can't wait to try just the base recipe. My husband and son loved it and only wish I had made more. On a side note, we had the dark chocolate gelato after a very spicy meal of traditional red Jambalaya and it was a nice dessert to quench the fire of the main dish. The dark chocolate cocoa is more black walnut in color and it turned out very elegant. And yes, I did strain it, very good advice from previous reviews.

Unbelievable Rolls

I've been using this recipe for some years now and love it. The last reviewer added all the tips I would have. I use it primarily for cinnamon rolls or monkey bread.

Cinnamon Rolls I

At first I was a little skeptical about this recipe as there was no milk or butter in the dough. However, needing to quickly justify my brand new professional mixer to hubby and not having enough flour for anything more, I made these. They are great for empty nesters, such as us, as they aren't a large amount. They 'could' dry out but since it is not a large batch, they tend to disappear rather quickly. Plus, I can make these rather quickly in the evening (to justify the mixer). Not too difficult to make and great to make the night before and bake up quick in the morning.
