Zucchini Soup I

I made this soup with vegetable broth instead of chicken broth (we had a vegetarian visitor) and it was fabulous, either hot or cold! I will definitely make this one again!

Sweet Chili Thai Sauce

Dipping sauce more than "pouring" sauce but can be thickened with more cornstarch. Nice to not have all those additives in there too, compared to the store bought ones. If your chile peppers are very hot, the sauce will be too. Mine is just bit too hot for me, but great for DH, I used three small very hot peppers - two of them without the seeds - and one larger, milder one, with the seeds.

Easy Cinnamon Fudge

This is not a boiled fudge, therefore it doesn't have the same quality, but it doesn't mean it's not yummy. I put a heaping teaspoon of cinnamon (because I love the stuff!) and no nuts as I didn't have any. I am making it again to take to work this week (it was a hit at my craft club!). I took a shortcut, I microwaved the butter and then added the milk to it, I use skim milk powder to make my milk, and used a wee bit more powder than what is required for 1/4 cup of milk. I sifted all my ingredients in a bowl, mixed them gently, and then added butter/milk mixture to the dry ingredients and stirred with a wooden spoon until all was homogenous. I then poured it in a baking paper lined bread tin, so I had a nice thick fudge (as opposed to more pieces and thinner) which I cut in about 1/2 in. squares. This recipe's a keeper!! (wonder what it would taste like with different spices instead of cinnamon!)

Oatmeal Peanut Butter and Chocolate Chip Cookies

We really liked those. Not too sweet, not too peanut buttery, not too chocolatey, just really nice, and soft and crunchy at the same time. Mine looked nothing like the ones in the photo, but were still quite edible :) My batter was of a great consistency, I had no problems with this recipe (unlike other people did). Might add chopped pecans to them next time, for extra crunch. Yes, we'll be having them again! I also froze half the mixture to cook at a later date and that worked really nicely too. I chopped slices of the frozen dough and baked as per the directions. Yum!!!

EAGLE BRAND® Chocolate Fondue

Can't say I would give this to my family every day, as it's very rich (the description suggests "for after school snacks"!)... but My oh my! It's YUMMY! A bit too thick, I had to thin it down with milk too, next time I will cook it for less time (I think I was waiting for it to boil, and cooked it for more than 5 minutes... I'm glad it never boiled as the other recipe I tried, I burnt!). I will definitely make this again, for a special occasion!

Fudge Cake

We loved it. Don't know why some people didn't like it, or how come it came out dry for them, not all ovens bake evenly, and mine is a very difficult oven, yet this cake didn't burn, baked perfectly and had a fudge cake texture. I baked in two round pans, which I had buttered and floured, and we're making again this weekend for our birthday party. It was also really nice to come across a recipe for a chocolate cake (with eggs, I tried eggless ones too which were really nice, on this site) not made with actual chocolate, and NOT from a PACKAGED MIX! Thanks a bunch for the recipe!! I might have to try those as cup cakes (adjusting cooking time of course) as I think they'd be FANTASTIC! Update 10 Oct 08: Made them as cupcakes and they turned out amazingly well! Had to adjust cooking time, but they were a HUGE success, piped some Decorator Frosting from this site http://allrecipes.com/Recipe/Decorator-Frosting/ and they were easily transported to the party venue, the icing didn't stick to the plastic wrap at all. I'm one happy camper!

Dump Bars

6, 7, 8 stars? I wish I could give it more! Delicious brownie, easy and so quick to make. I couldn't stand the idea of putting a full cup of oil so I did half canola oil and half apple sauce and it is just FANTASTIC!! (Edited to add that I did make it with the full cup of oil one time and it was very nice that way too! Still a BIG lunchbox hit!)

KELLOGG'S* RICE KRISPIES* Chocolate Cereal Bark

Hmm, they get 5 stars for taste, and it's a simple recipe to make with children (I gather you could melt the chocolate and butter in the microwave to make it even quicker) but ... It's very messy, it melts on your fingers, I was thinking "what a great birthday party treat!" but nope. Not great for a lunchbox snack either, for the same melting reason. Perhaps making them in patty pans, instead of as a slab would make them a bit easier to eat without getting dirty. But no doubt, Rice Krispies (or Rice Bubbles in Australia) and chocolate are a tasty combination!!

Cheater Pancake Syrup

Nice and quick and close enough to fool most. I had to reduce the vanilla slightly as its taste was a bit too overpowering for me (I'm from Québec *wink*). I wonder if I could boil it a bit more and use it on snow... if I can find snow in Western Australia that is :) - note added Feb/06 this does crystallize, I'll make half a recipe from now on when making this.

Squash Pie

This pie is gorgeous! I made it in a "Marie cookie crust" (can't get Graham crackers here in Australia) and the pie tasted really good!It was delicious and not overly spicy like other recipes. It also looked really nice when it came out of the oven! Thanks for submitting this recipe, Carol! My toddlers don't eat this yet but I'm sure it's a taste that would please most kids too so I have to give it a 4 for that section :o)

Zucchini Corn Fritters

A bit bland, too much fat in the recipe in my opinion (I even cut the butter to less than half the required amount), a bit too sweet. Not horrible, but not that great. Good consistency though and they cook nicely. Of course, Ranch dressing would add flavour...

Eggless Chocolate Cake II

We really liked it, it's easy to make, no egg so batter is safe for kids to lick! It was moist, and not as crumbly as other cakes, also didn't have that baking soda taste that similar recipes have had. I used the Busy Day Cocoa Icing from this site, and it's a nice quick cake easy to whip up before dinner! I was testing this recipe for Cupcake Cones and it worked really well. What I really liked about it is that it's not overly sweet, so it's great with icing, also that it didn't seem as crumbly as other chocolate cakes.

Chocolate Oatmeal Cake

Nice cake, quick to make. Fairly crumbly. I can just imagine how nice it would be it with some raspberry jam in the middle! I also think it's important to let the oats soak thoroughly as some of mine ended up at the bottom. Will try it with apple sauce (instead of using oil, or for half the oil) next time, now that I know what it is supposed to be like as per the recipe.

Easy Granola Bars

nice, i like that's it's quick and customisable. I used ground up hazelnuts instead of sliced almonds. I also like that it's got lots of oats. I used rolled oats instead of quick cooking. A keeper. Hazelnuts and apricots come to mind, as does white chocolate chips and cranberries. Lots of possibilities. (I just noticed, reading other people's reviews, that I forgot to add the butter to the recipe! oh well, it was nice anyway!!) * * * Made it a second time, used 1 cup almond meal in lieu of sliced almonds, dessicated coconut in lieu of flaked coconut, 2 tbsp rice bran oil in lieu of butter, and added one egg white (just because I had it on hand) and it turned out beautifully! I absolutely love this recipe. I have a healthier one with yoghurt and honey instead of sweetened condensed milk, but I love that this one is so delicious, versatile, and QUICK!!! Thanks again!

Banana Oat Muffins

Very nice and fluffy, not too sweet, not too fat. I made it with whole wheat flour and it turned out really nicely. My kids (18 months) loved them and I felt good feeding these muffins to them! I'll definitely be making more!!!

Homemade Candy Bars

The taste is very nice, the almonds add a great texture but the bars/squares didn't stay together. The icing stuck to the coconut mixture, but the coconut mixture did not adhere to the chocolate base at all. It was really messy to cut. Perhaps with another can of Condensed Milk to make the coconut and almond mixture more gooey it would stick. Not sure I'll give this another go. I'm very sorry :(

Zucchini Patties

I had to give it a 3 for kid rating because I have no idea how kids would react to it, my daughters are too young to appreciate the flavour! This recipe is GREAT! I do highly recommend that you wring all possible water out of the zucchinis. I do this by wrapping them in a clean tea towel and squeezing as much water I can. I also found that making this recipe in advance and leaving it in the fridge 1 hour or more, enhances the flavour. I will DEFINITELY be making that one again, and again, and again!

Best Brownies

Nice tasting, the family liked it but I didn't think it was a "great" brownie IMO (and I know lots of people disagree with me judging by all the 5star reviews). I have a very similar old recipe which omits salt and baking powder and uses 3/4 cups of flour, I like mine better. Unlike others I won't rate a recipe 5 stars if I modify it. It is however not a bad recipe and very quick to make. Mine didn't turn out cakey at all (I did not beat the eggs), but a little bit too fudgy. If you like your brownies very fudgy, this could be for you. We also didn't frost the recipe.
