Spanakopita (Greek Spinach Pie)
This was very good- I did double the feta and use a mixture of butter and olive oil between the sheets.

Butternut Squash Soup
Added a sweet potatoes and a few other veggies but otherwise stuck to it- sour cream with it is delish.
