Vegetable Chowder

Delicious and nutritious! I used a whole head of cauliflower and a whole bushel of broccoli so I added 2 cups of water to compensate. It turned out perfect. I would definitely go with the 3 cups of cheese, too. This will be a regular for me.

Banana Banana Bread

Perfect, moist banana bread. I used 5 ripe bananas and substituted with whole wheat flour, so needed to cook an extra 15-20 minutes, but it turned out fantastic. I also added about 1/2 c. of raisins. My whole family loved it.

Delicious! I made a few small changes to make the dish more to my liking: substituted the tomatoes with a large can of crushed tomatoes, omitted the anchovies and instead added about 1 lb. of shrimp for some protein, took the olive oil down to 1/4 cup (which was plenty), added 1/2 tsp. each of salt, dried oregano, and garlic powder. Simply delicious dish!

Salsa Chicken Burrito Filling

This is a great recipe. I used 8 oz of salsa and did my own spices (tumeric, garlic powder, chili powder, cumin, and dried onion flakes) instead of taco seasoning. Turned out delicious.

Banana Crumb Muffins

Delicious. I made these with whole wheat pastry flour and they were moist and perfect; however, my muffins were HUGE -- I think next time I will make 11 muffins with the batter instead of 10. Also, I love cinnamon, so I used about 1/4 tsp. instead of 1/8 tsp. My family loved these, even my SUPER picky 2-year old.

Zucchini Patties

Absolutely awesome! I drained zucchini and added 1 tsp of garlic powder and they were wonderful. I also fried them in a large skillet with some spray margerine and they were perfect. I thought they tasted awesome with the sour cream. YUMMY!

Best Tuna Casserole

Pretty good casserole. My subs were whole wheat shells, fresh (finely chopped) mushrooms, salt and pepper to taste, and crushed Goldfish crackers instead of chips. The family loved it--very tasty.

Stuffed Eggplant with Shrimp and Basil

Oh my gosh, this was SO delicious. I followed other suggestions and doubled the shrimp and garlic, only used 1/2 cup of bread crumbs, plus added 1 tsp. of garlic powder, 1 tsp. of thyme, and only used a littl over 1/4 cup of parmesan. SO wonderful--will make this again and again.

Green Bean 'N' Pea Salad

My husband and 1 year old loved this salad. I used 1/2 cup of sugar, and instead of the 1/3 cup of cider vinegar I used half red wine vinegar and 1/2 water (to make 1/3 cup) and 1 tbsp. of apple juice. It was delicious and inventive!

Pineapple Orange Pancakes

I was really expecting to taste some orange flavor, but there was nothing. Next time I will add some orange zest or extract. I also added some cinnamon, ginger and a pinch of nutmeg for some added flavor. This recipe is a good start.

White and Wild Rice Pilaf
