Slider-Style Mini Burgers

Reviewed: Apr. 9, 2010
Oh my goodness these were addicting! I was a bit skeptical to try these at first because I thought that the crumbled ground beef would be weird in a burger vs. patties but these were excellent. I thought I had a package of onion soup mix lying around but I didn't so instead I added a finely chopped medium onion when the beef was almost cooked through and onion powder, garlic powder, seasoning salt and pepper to taste. I loved the addition of fresh onion and probably would have felt like this recipe was missing something if I had not added it. I found these great slider buns (at Greenwood market for you seattlelites) that conveniently came in a 24 pack. I'm glad that I found these because I'm not sure how I feel about using sweet hawaiian rolls. I love those rolls with butter but I just don't think I'd like them with burgers. I had leftovers and they tasted great heated in the microwave the next day. Thanks so much for this recipe!

Very Chocolate Ice Cream

Reviewed: Feb. 23, 2010
Great flavor and great consistency. I did have some issues with the ice cream being kind of gritty but that was an error on my part. I had a hard time melting my chocolate evenly so there were a lot of tiny chunks of chocolate that made it gritty. Next time I'm going to melt the chocolate separately and then add it to the cream.

Vanilla Ice Cream V

Reviewed: Feb. 20, 2010
This did not turn out well for me. The flavor was nice but the consistency was horrible. It was very icy and would not harden in the ice cream machine. I stuck this in the freezer and it just turned into rock hard frozen cream.

Three Cheese Manicotti

Reviewed: Feb. 9, 2010
This was delicious. I did not have parmesan so I used some cheddar that I had that needed to be used up. I also halved the recipe and used jumbo shells instead of manicotti. There was enough filling to fill about 3/4 of the shells and I used a plastic baggy for this step which made things a lot easier. I was cooking for two so there were plenty of stuffed shells left over (not yet thrown in the oven) that I just stored in the freezer. I will definitely be eating this a lot during lent season!

Oven Roasted Red Potatoes and Asparagus

Reviewed: Jan. 20, 2010
The taste was pretty good but this needs a lot of work. First of all 4 tsp of rosemary and thyme would be way too much. I used 1 tsp of each and that was plenty. The potatoes ended up being over cooked (they were over done at the 30 minutes when I went to add the asparagus and it's not like I cut them into small pieces or anything. I added the asparagus during the last 10 minutes of cooking and they were way over cooked too. If I try making this again then I'll probably leave out the asparagus and just make the potatoes and not use foil so that they'll be crisper. *Update* I just had the leftovers from the fridge and the flavors of the potatoes were soooo good. I normally like my potatoes hot, with the exception of potato salad, they tasted awesome cold! I will definitely try tweaking the cooking directions and still leave out the asparagus.

Bacon-Wrapped Potatoes

Reviewed: Aug. 23, 2009
I tried the recipe as written and served it with sour cream and did not like it. The onions didn't cook up very well and the bacon didn't add much flavor. I love anything involving potatoes so I decided to give this another try. This time I layered the onions in and then seasoned the inside of the potatoes with salt, pepper, garlic salt and put in a thin slice of butter. I cooked these wrapped in foil and then at the end opened them up and broiled it to crisp up the bacon. This time they tasted awesome because the potatoes were allowed to cook in their own juices and the onions were nice and tender!

Garlic Chicken Fried Chicken

Reviewed: May 16, 2009
I halved the recipe but kept the amount of spices the same (basically used half the amount of bread crumbs, flour, milk and chicken called for) and ended up with very moist and flavorful chicken. I used a piece in a sandwich with swiss, tomato and lettuce and that tasted wonderful too!

Key Lime Cake II

Reviewed: May 13, 2009
I liked this a lot. My bf raved about this cake and said it tasted just like the one at his favorite bbq joint. I probably wouldn't recommend this to anti boxed cakers... but if you don't mind them then try this recipe!

Delicious Ham and Potato Soup

Reviewed: May 13, 2009
This has to be one of my favorite recipes on this site! My family always has ham at our holiday get togethers and now I'm always excited to get a hold of some of the leftovers for soup! I always add extra potatoes, ham, onion and celery. Then to give it a little something extra I add dried parsley, dried thyme, garlic powder and seasoning salt. I never have a problem with this soup being too salty (in fact i add more!) but I think that might have something to do with how salty your ham is to begin with.

Laura's Unbelievable Chicken and Pasta

Reviewed: May 13, 2009
I liked this. It's definitely something that I will make again. I substituted about 4 medium sized chopped tomatoes for the cherry tomatoes since I do not care much for them (I think I'll try sun dried next) and also added salt, pepper, garlic powder, onion powder and seasoning salt to the sauce. The sauce was a bit runny at first but after sitting for about 15 minutes it thickened up nicely. I would advise cooking the chicken with minced fresh garlic and whatever seasonings you like because this helps give the dish a little something extra.

Way Easy Pizza Sauce/Bread Stick Dip

Reviewed: Apr. 7, 2009
This sauce good but I'm sure there are probably even better recipes out there. However, I always use this recipe when I make pizza because it's way better than the jarred stuff, it's super easy/fast to make and most importantly I have all the spices on hand! I use dried parsley because it's more convenient and it tastes just fine.

Strawberry Torte

Reviewed: Mar. 31, 2009
Holy smokes this was good!!! Not to mention incredibly easy. The submitter must use a different kind of lady fingers because the ones they sell at my local Safeway came in 3oz packages and I ended up only using 2 1/2 packs. Also, I took other reviewers advice and cooked down whole unsweetened strawberries with sugar and cornstarch and also added real strawberries into the cake layers. Awesome recipe!

Chocolate Crinkles III

Reviewed: Mar. 31, 2009
Yummy! These are definitely "milk & cookie" cookies! I was impatient and only left these in the fridge for about 30 minutes. The key is to not over work the dough when you are rolling... that's when things start getting really messy! I like to add white chocolate chunks or chocolate chips to the batter to give it a little something extra.

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 17, 2009
I've never had corned beef before and absolutely hate beer but I tried this anyway. I'm so glad that I did! I halved the recipe and still some how managed to put a 22 oz of guinness in there and didn't realize what I'd done until after it went in. I was worried that I'd messed it up but it still turned out yummy :). I used the leftover liquid to cook some potatoes and carrots... so flavorful and good!!!! I wouldn't recommend doing that for people who do not like salty things because the vegetables do come out a bit salty. Thanks for the recipe!

When I first tasted this they tasted like mushy Oreos coated in almond bark... yuck! However, after refrigerating them they tasted a lot better. This gets 4 stars because they're very easy to make, come out looking fantastic and my bf and his friend really liked them.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Feb. 19, 2009
I was kind of scared to try this recipe because every "chewy" chocolate chip recipe that I've tried just never tasted good and had a weird texture but this recipe was the best! Everybody loved these. This is going to be my new chocolate chip recipe. I only added 8oz of chopped up baking chocolate. I think the 16oz called for would have been way too much for my taste.
