Fruit Salsa

This is delicious! I added the juice of a lime, red pepper flakes (for more kick), and salt/pepper. I tripled the recipe for 6 people and almost all of it was eaten!

Mulligatawny Soup I

This is a splendid soup! I followed the suggestions of adding garlic with the onion, using twice the curry powder and replacing the cream with coconut milk. I will make this again! I cooked my chicken ahead of time to pink center just to make sure it would be cooked enough.

Slow Cooker Chicken Mole

This is a perfect mole sauce that is so easy! I added one small can of stewed tomatoes because I wanted more sauce, and since I didn't have corriander I used cilantro. Next time I will omit the sugar because the rasins and peanut butter add enough sweetness. Half of an adobe chipotle will add the heat to please tender palettes. I never thought I would make a homemade mole sauce but this was very easy!

Big Ed's Cajun Shrimp Soup

This is fabulous! I used pasillo peppers instead of green bell peppers which gave it a great flavor. I didn't think V-8 juice would be good but it made all the difference.

Cheeseburger Soup I

This is now a favorite! I added garlic powder, cayenne pepper and Worchestershire sauce. For ease I used frozen Southern Style hashbrowns. I also used a mixture of munster and cheddar cheeses. Great recipe!

Balsamic Pea Salad

Fantastic salad! Like other cooks, I used white balsamic and the color was beautiful instead of brownish. I also reduced the amount of mayo to 1/4 cup as suggested. My changes were to use red onion and add minced fresh mint. The mint was a fresh pop and worked well with the feta and balsamic.

Baked Onion Dip II

This is so easy and I had people raving about it at the party. It was a small gathering so I cut the receipe in half. I baked in my GE Advantium oven for 13 min on Upper 7, Lower 9, Micro 2, Conv oven 6. It was bubbly and browned with a crispy top.

The Ultimate Margarita

Very strong so I used half the tequila. Use good tequila because this is a fresh and simple ingredient top notch margarita. I boiled the lime peels in the simple syrup which gave even more lime flavor without the tartness.

Double Tomato Bruschetta

Really flavorful bruschetta. I made individual toasts for a picnic and used the suggestion to melt a blanket of fresh mozzarella cheese over the top that helped keep the fresh tomato mixtures in place. Don't use dried basil if you can find fresh!
