Slow Cooker Chicken Mole

This is a perfect mole sauce that is so easy! I added one small can of stewed tomatoes because I wanted more sauce, and since I didn't have corriander I used cilantro. Next time I will omit the sugar because the rasins and peanut butter add enough sweetness. Half of an adobe chipotle will add the heat to please tender palettes. I never thought I would make a homemade mole sauce but this was very easy!

Fruit Salsa

This is delicious! I added the juice of a lime, red pepper flakes (for more kick), and salt/pepper. I tripled the recipe for 6 people and almost all of it was eaten!

Dried Cherries, Pecans and Rosemary Brie en Croute

I served this last year and just came back to find the recipe for a boat picnic. This is wonderful! I substituted Cranraisins since I couldn't find dried cherries and it was perfect. Rave reviews!

Excellent recipe! I love the sweet flavor, but I like to balance the sweet with some tangy by adding catsup. Otherwise, it's perfect the way it is!

Big Ed's Cajun Shrimp Soup

This is fabulous! I used pasillo peppers instead of green bell peppers which gave it a great flavor. I didn't think V-8 juice would be good but it made all the difference.

Cheeseburger Soup I

This is now a favorite! I added garlic powder, cayenne pepper and Worchestershire sauce. For ease I used frozen Southern Style hashbrowns. I also used a mixture of munster and cheddar cheeses. Great recipe!

Blueberry Sour Cream Coffee Cake

Potato Chips

Takes much longer to cook but worth it. I used two large platters with parchment paper and rotated filling and cooking. Each platter took 9 minutes in the micro making sure the chips did not overlap. I used the mandolin to slice Yukon Gold potatoes thinly, quickly and easily, and sprinkled hot chips with a mixture of sea salt, onion powder and cayenne pepper.

Indian Tomato Chicken

This is so good! But leave the cinnamon stick whole or you will be biting into small chunks of cinnamon bark. Read through reviews for good suggestions, the most important one is to double the sauce.

After-Thanksgiving Turkey Soup

This is delicious soup! I took the advice of reviewers and used half the butter, half the flour, a rosemary sprig and bay leaf in the stock, and twice the vegetables (half to make the stock the other half to add texture to the soup). Fantastic!

Baked Onion Dip II

This is so easy and I had people raving about it at the party. It was a small gathering so I cut the receipe in half. I baked in my GE Advantium oven for 13 min on Upper 7, Lower 9, Micro 2, Conv oven 6. It was bubbly and browned with a crispy top.

Brazilian Black Bean Stew

I was so looking forward to this stew but in the end it is bland and surprisingly lacks flavor. Kick up the spices (garlic, cumin, chili powder, S/P) on this one and add a little acid such as a squeeze of lime juice.

Double Tomato Bruschetta

Really flavorful bruschetta. I made individual toasts for a picnic and used the suggestion to melt a blanket of fresh mozzarella cheese over the top that helped keep the fresh tomato mixtures in place. Don't use dried basil if you can find fresh!
