Spinach Casserole

This has become one of my most frequented recipes, with a few major modifications. First, I only use about 1/4 cup of the butter, and you can cut it down further to make this dish a bit healthier. I also cut out the processed cheese food and add in 1 cup of mixed cheddar cheese blend. I also add in some minced garlic in addition to the garlic powder and 1/2 white onion. Delicious, and I use a bit of cooking spray on the top layer only to prevent burning. Works like a charm every time, and I always get recipe requests for this casserole!

Homemade Black Bean Veggie Burgers

Great recipe! Four stars for me because add'l bread crumbs were needed to keep the mixture together. I used only the ingredients called for in the original recipe, and found this to be a great vegetarian alternative that I'll make again and again. I liked the amount of heat from the hot sauce and chili powder. Instead of baking or grilling, you can also use a little cooking spray and cook these up right on the stove.

Slow Cooker Macaroni and Cheese I

I was not a fan of this recipe. I cooked it about 1.5 hours less than the recipe calls for, and still found it to be extremely dry and flavorless.

Easy Vegetable Pot Pie

Loved this simple recipe to get me started. I used some fresh brocolli, cauliflower and chickpeas on top of about 1/3 can of mixed vegetables and it was great. Even better the second day. If you don't have milk on hand or want a little more juicyness to the inside, try using a tablespoon of extra virgin olive oil!

Vegetarian Buffalo Chicken Dip

I was so excited to see a vegetarian version of this buffalo dip, but was disappointed by the results. I made exactly as written and used all of the recommended brands. Next time, I will try shredding the chik'n in a food processor instead of just dicing to improve the texture. I will also mix in blue cheese dressing, take out some of the ranch and experiment with different types of cheeses. It was just a little too "blah" for me as is.

Artichoke Spinach Lasagna

I made this recipe as-is and found it to be a great vegetarian version of one of my favorite meals. I did find it to be a little watery, but it was perfect the next day for reheating. Next time, I will try using only 3/4 of the suggested vegetable broth, and i may substitute the feta cheese for parmesan as a topping. Overall, delicious recipe and relatively easy to put together quickly!
