Mom's Zucchini Bread

Holy Zucchini! This was delicious - I made a few changes based on other reviews: 2 cups sugar (1 of which was brown), about 3 1/2 cups zucchini, omitted the nuts and made 5 mini-loaves (45 minutes cook time there). My 4 & 6 year old ate an entire loaf before it was cooled off. They are asking for more for dinner tonight!

Addictive Sweet Potato Burritos

I thought I would love these. I took reveiwers' advice and used black beans...our family loves black beans. But I just wasn't impressed with these. They lacked flavor and while the ingredients would have probably been great if I had made them as tacos and added some extras like lettuce, avocado, maybe some sour cream an salsa to the "stuffing". My husband's review was that they were "ok" but don't rush to make them again. I really wanted to love these.

Best Ever Blueberry Cobbler

OK, part of this is my fault...I don't care for this type of "crust". It is very thick and had a weird aftertaste to me. But the berry mixture was great...I used 4 cups of blueberries as others suggested, and it was fantastic. But the crust...I didn't care for it.

Cream Cheese Frosting II

Very Cream Cheesey frosting...but it absolutely was the perfect topping for the red velvet cupcakes (also from this site) I made. I had compliments from all! A definite keeper!

Caroline's Chocolate Fudge Frosting

So very good!!! It was a little thin, I used the 2 tbsp of milk, and had to add some extra powdered suger to thicken it up. But it was delicious and perfect on a chocolate cake!

Salisbury Steak

Great...took others' advice, added onions and cream of mushroom soup, baked in oven after browning the patties. Even my 20 month old liked it!!! Will be in the regular rotation!

Tofu Parmigiana

If you're a tofu fan, you'll like this recipe. I gave four stars because my husband is NOT a tofu fan, so he asked that I not make this again. I thought the flavor was delicious, and my 3 and 5 year old son's loved it and had seconds!

Black Bean Vegetable Soup

Flavor was fantastic, but like other reviewers, the next time I make it (and there WILL be a next time), I would definitely add another can of beans and perhaps even some petite diced tomatoes, both drained but not "blended", and decrease the amount of broth, as we like a thicker soup. For your meat lovers, you could also add some ground beef or turkey for a black bean chili.

Absolutely Fabulous Greek/House Dressing

Wow- this stuff is delicious. I cut the recipe way down to suit the needs of my family, since no one else really eats salad but me. But guests have commented on it and I am never without some made! I've used fresh herbs and garlic as well - easy to "mess with" but yummy as listed too!

Grilled Portobello Mushrooms

From the reviews I read, I guess I was expecting MORE flavor. It was definitely good, but I have had better grilled portobello mushrooms through marinating with a balsamic vinegar/oil/onion/herbs - type marinade. Ideally, we could combine the two. Or perhaps moreof the pepper/garlic mixture. I did cut the salt in half, as other reviewers suggested. Don't get me wrong, this recipe is good, but not so much that my mushroom-wary DH would eagerly eat it! IF you're a mushroom lover, I do suggest you try it, I'd hate for you to miss out!

Best Bread Machine Bread

WOW, this bread is fantastic! After making recipies found in the bread machine manual and finding them dry, dense and bland, this was music to my tastebuds! I did, as another reviewer recommended, add about 1-2 tbls of honey and an extra 1/2 tsp of salt, and there were no problems! yum!!!!

Chuck's Favorite Mac and Cheese

I didn't care for it, but my husband said he liked it and my mother-in-law LOVED it. Too much of the sour cream flavor in it. Maybe the combo of the sour cream and the cottage cheese? I won't make this again, but mac & cheese is a preference thing, so don't let me stop you from trying it!

Strawberry Spinach Salad I

FANTASTIC! Even my picky husband and a guest who didn't care for spinach raved about it. FYI, could use on a romaine salad. However, the spinach did get soggy quickly...the only reason for 4 stars rather than 5. May have sat too long before I served it.
