Ramen Cabbage Salad

Delicious! And way too easy. I use sesame seeds instead of sunflower seeds. I just made it for a potluck last night and it was all gone and I got all kinds of compliments on it. I just added one bag of pre-cut lettuce, thinly sliced celery, added sesame oil to the dressing, and used the Oriental flavor ramen.

Vegan Pancakes

Like other reviewers said, these pancakes are not as dense as ones with milk or eggs. I let the batter sit for 10 minutes or so before cooking. I tripled the recipe (but put less water) and it yielded 22 fluffy pancakes. I spread a thin layer of leftover bacon grease on each pancake. My husband was raving about them.

Garbanzo Bean Chocolate Cake (Gluten Free!)

SO YUMMY! My 6 year-old son says he likes it better than regular cake. No one can believe it is made of garbanzo beans. I will definitely be making this over and over and over. I didn't have semi-sweet chocolate chips on hand so I used a Hershey's bar and some Hershey's drops and lowered the white sugar to 1/4 cup.

Pudding-Topped Fruit Salad

I couldn't wait 3 hours for the pudding to cool but it still tasted great and the texture was still thick enough. It definitely makes ANY fruit combination DELICIOUS!!

Pumpkin Pie Squares

This is my new favorite dessert!!! The crust was small and I had to press it down thin. I also had to bake the filling for about 40 minutes total until the filling no longer moved like liquid in the center. The pumpkin filling wasn't too sweet which is what I love, others may not.

Banana Crumb Muffins

I doubled the recipe and it came out perfectly moist. I got 24 regular-sized muffins out of it. It probably needs less than 3 cups of flour. More like 2 3/4. I thought I could substitute the butter in the topping with margarine but it came out more like a paste than crumbs. The muffins still tastes delicious and moist!!!

Grandma's Corn Bread Dressing

This was delicious!! I cannot have a lot of wheat so cornbread was terrific for me. I doubled the recipe but since my cornbread was too moist, I still only used 2 eggs and 1 cup of broth. I used sage, salt and pepper to taste (before adding eggs and broth). Since my batch was larger and quite moist, the dressing needed at least 45 minutes in the oven.

Pumpkin Roll II

This recipe was so quick (30 minutes) that I made another! I made 2 pumpkins rolls--1 with the nuts in the cream cheese and 1 with the nuts in the cake. My husband and I liked the one with the nuts in the cream cheese best.

Pumpkin Butter II

SO EASY! I used fresh pumpkin so I didn't measure anything. I just did it to taste. Because I ended up with what looked like more than 3 1/2 cups of puree, I used 2 gelatin packets. My little kids and husband think it tastes delicious!

Simple yet delicious! It was a great way to get use my bruised apples that were still good. It did take longer than 40 minutes at 350. I only used 1/2 cup of white sugar and it was sweet enough for us.

I incorporated Sciota's suggestions and added a dash of Rosemary and thyme. I used cauliflower mash because I cannot have potatoes. There were no leftovers! My husband was practically licking the dish.

Easy Pizza Sauce III

My husband was astounded that I had thrown the sauce together because it tasted so good. The kids thought the garlic was a little spicy. Maybe next time I'll cook the garlic a little in the microwave. I added a little basil, oregano, paprika, sugar and baking soda as recommended by other reviews.
