Cream Cheese Squares

So easy and delicious! I halved the recipe and baked it in a smaller dish. It turned out just great!! My 7 year-old son said that this is one of the best desserts he's ever had.

Garbanzo Bean Chocolate Cake (Gluten Free!)

SO YUMMY! My 6 year-old son says he likes it better than regular cake. No one can believe it is made of garbanzo beans. I will definitely be making this over and over and over. I didn't have semi-sweet chocolate chips on hand so I used a Hershey's bar and some Hershey's drops and lowered the white sugar to 1/4 cup.

Lentil Soup

I will definitely make this over and over and over. I didn't have celery but it still tasted great. I like to add my spinach after the heat's been turned off so as not to overcook the spinach leaves.

Banana Crumb Muffins

I doubled the recipe and it came out perfectly moist. I got 24 regular-sized muffins out of it. It probably needs less than 3 cups of flour. More like 2 3/4. I thought I could substitute the butter in the topping with margarine but it came out more like a paste than crumbs. The muffins still tastes delicious and moist!!!

Cranberry Pumpkin Muffins

Delicious! I didn't chop the frozen cranberries. I added pecans and orange zest to the mix. Then I covered it with an orange glaze. Next time, I will try it without the pecans.

Marinated Pork Chops

This was VERY flavorful. Instead of grilling, I pan-seared each side then baked it in the oven at 350 degrees about 20 minutes on each side. My friends complimented me on it. I definitely won't use nearly as much vegetable oil, maybe just 3 tbsp.

Swedish Chocolate Balls (or Coconut Balls)

My kids and I can't stop eating these things! It was easier for me to put the coconut flakes directly into the balls. I didn't have coffee in liquid form on hand so I just sprinkled some powdered coffee in the mix. The coconut and melted chocolate I had were both sweetened so I only used 3/4 cup of sugar and that was perfect.

Crumb-Coated Chicken Thighs

Terrific recipe! I used it on 7 drumsticks and it came out perfect--crispy on the outside and moist on the inside. For larger drumsticks, I poked a hole in them and left them in longer. UPDATE: I experimented with coconut flakes instead of bread crumbs. YUM!

Blueberry Lemon Loaf

My daughter likes sour foods so she really liked this recipe but I wasn't such a fan of the lemon-blueberry combo. The lemon brought out the tartness of the blueberry.

Downeast Maine Pumpkin Bread

I took reviewers' advice and only used 2 cups of sugar. I subbed 1/2c oil for applesauce just because I could. This recipe made 1 loaf, 12 muffins, and 3 mini-loaves for me.

Chocolate Pretzel Rings

This is a great activity to do with the kids--even my 2 year-old helped. They're so quick and so tasty. I used Reese's pieces, Hershey's Kisses Drops and Hugs Drops on waffle pretzels. For those who can have peanut butter, the Reese's pieces kept it from being too chocolate-y.

Pumpkin Roll II

This recipe was so quick (30 minutes) that I made another! I made 2 pumpkins rolls--1 with the nuts in the cream cheese and 1 with the nuts in the cake. My husband and I liked the one with the nuts in the cream cheese best.

Apple Crisp III

Simple yet delicious! It was a great way to get use my bruised apples that were still good. It did take longer than 40 minutes at 350. I only used 1/2 cup of white sugar and it was sweet enough for us.

Pumpkin Butter II

SO EASY! I used fresh pumpkin so I didn't measure anything. I just did it to taste. Because I ended up with what looked like more than 3 1/2 cups of puree, I used 2 gelatin packets. My little kids and husband think it tastes delicious!
