Easy Pavlova

I found this to be waaaay too sweet. The sugar needs to be cut in half at least. Also, I didn't use corn starch. I used 1/2 tsp cream of tartar because that's what I'm used to using for a meringue. I just couldn't get past the cloying sweetness however.

Squash-Apple Bake

This is SO amazing. I did cut the recipe in half, and then had to bake it for about 45 minutes longer than the recipe calls for. I really like my squash mushy so I can mash it. We were licking our bowls it was so delicious.

Swiss Steak Quick and Easy

Very delicious. Similar to beef stew. The meat comes out very tender, and it is easy enough for my husband to make! I didn't bother to brown the meat because I was throwing it together in a crockpot at 7:30am. It was still amazing anyway.

Aunt Ro's Baked Beans

I had this at a b-day part a few weeks ago and couldn't wait to make it for my family. I pre-made it today for dinner tomorrow (busy school night!). I'm going to throw in some all-beef hotdogs when I warm it and serve it with toasted-buttered hotdog buns. The only change I make is to use 28oz cans of baked beans and 2 big cans of kidney beans instead of the pinto and butter beans, because we just like those better. Fantastic recipe!

Fabulous Wet Burritos

One of the best Mexican recipes I have ever made. It was so fantastic. I added 1/2 cup salsa to the beef/bean mixture, and then topped it when cool salsa to serve. Just amazing.

Baked Bar-be-Que Chicken

Awesome chicken recipe! We don't have a grill, and I'm always so jealous in the summer of the delicious grill smells. So, I use this recipe, but with 2 small changes. 1: I give the meat a good sprinkling of coarse seasoned sea salt before it goes in the oven. 2: After I pour the bbq sauce over the baked chicken I broil it for 4-5 minutes per side. It comes out dark, crispy and just as good as on a grill. I make this at least once a week with cheap cuts of chicken, like thighs. Usually I only serve a veggie with it, no starch. Best budget family recipe ever.

Grilled Marinated Swordfish

Amazing swordfish recipe. Don't be scared by the poultry seasoning! I was, but it turned out fantastic. Brought the recipe to FL to cook for my mom in May and everyone was impressed. Making it again tonight! :)

Coconut (Haupia) and Chocolate Pie

I thought this recipe was ok, but what the heck is 7/8 of a cup?! I added what I thought for the chips, and it turned out to be WAY too many. I think that's a mistake. The coconut part was barely flavored coconut, and the chocolate part was too sweet. If I make it again, I'm making some big changes. Thanks for the idea.

Awesome. Made these for Christmas presents last year, and everyone loved them. They're light and slightly sweet without being overly sugary, and the texture is so chewy and soft. It's a nice change from typical cookies.

Garlic Chicken

I altered a few things on the recipe, just because I know how we like things, and it came out awesome. I doubled the sauce and the breading, because I used thin-sliced chicken breast. Also, I used half butter and half oil, and about 6 cloves of garlic, and I used plain Panko. I added salt and pepper to the panko. Then I baked them at 425 for 15 minutes and 450 for 3 minutes to brown them up. They were SO delicious! Thank you for this great idea! :) 6/30 - I made them again for my mom and stepfather's welcome home party and everyone lost their minds. We had some leftovers and they weren't as good the next day, so don't hesitate to eat it all that night!

Buttery Soft Pretzels

My daughter and I made these together. They were really awesome. Honestly, they do taste different than the ones they sell at the mall. But, that's ok! They are just as good, and probably not as much fat since they're not sitting in a vat of butter. My daughter begs me to make them all the time. We've done it twice. We make three flavors all with butter: garlic/salt, plain salt and cinnamon/sugar. All of them are fantastic. Thanks!

Bread Pudding II

Amazing Bread Pudding recipe. I omit the raisins because I hate them. The pudding comes out perfect every time. Had company tonight and they just raved. But don't worry, I told them I'm just a pro at following a good recipe ;)

Honey Roasted Red Potatoes

This didn't turn out well for me. I might try it again, because I like the idea, but I think it needs some tweaking. I did it just like the recipe said, and I ended up with soupy, mushy, weird tasting potatoes. It was the onions that did it. They totally ruined the recipe. I didn't taste the mustard at all. Next time I will roast the potatoes with a little salt and olive oil at 375 for about 1 hour. Then I will baste them lightly with a mixture of 2 tbsps honey and 1 tbsp melted butter. Then I will broil them. The broiling idea was great.

They were pretty good, but I hate raisins, so that might have swayed my vote. Also, it was a little too much spice for my taste. Other than that, they were good.
