About this Cook
I'm a mom, and I go to school full time. I love to cook, but my family can't eat dairy, so it's hard for me to cook some of my favorite dishes.
My favorite things to cook
Pasta, any chicken dishes, meat pies, fish (i do live in New England after all!), cakes and cookies (when I get in the mood).
My favorite family cooking traditions
We have a few things that we make every holiday, like Easter is always Polish cuisine, and Xmas we always make date squares, fudge, and peanut-butter balls.
My cooking triumphs
I reluctantly gave up my grandmother's recipe for roasted chicken to try my dad's...and it was better! I'm so glad I gave in and just did it :)
My cooking tragedies
One time I made a HUGE pot of red clam chowder..and I added way too many red pepper flakes..it was so spicy it made me choke. I had to throw the whole pot away. It was a nightmare..I cried. Also, I recently tried to make Tres Leche cake..It came out so bad, it actually made me sick. I threw up all night.

Fabulous Wet Burritos
One of the best Mexican recipes I have ever made. It was so fantastic. I added 1/2 cup salsa to the beef/bean mixture, and then topped it when cool salsa to serve. Just amazing.

Baked Bar-be-que Chicken
Awesome chicken recipe! We don't have a grill, and I'm always so jealous in the summer of the delicious grill smells. So, I use this recipe, but with 2 small changes. 1: I give the meat a good sprinkling of coarse seasoned sea salt before it goes in the oven. 2: After I pour the bbq sauce over the baked chicken I broil it for 4-5 minutes per side. It comes out dark, crispy and just as good as on a grill. I make this at least once a week with cheap cuts of chicken, like thighs. Usually I only serve a veggie with it, no starch. Best budget family recipe ever.
