Broccoli and Chicken Stir-Fry

We all thought this was yummy! The sauce was just the right texture and consistency, even as leftovers. It makes more than 3 servings (although I didn't measure everything exactly, like the broccoli). I am making this again soon!

Crispy Herb Baked Chicken

The title is misleading - I had to double check to see if I missed anything. There are no "herbs" in this recipe (unless the author thinks garlic is an herb). It could be called Crispy Garlic Chicken. It was a little bland so I had to doctor it up a bit with - you guessed it - some actual herbs (rosemary and thyme).

To Die For Blueberry Muffins

I have tried this 3 times and each time the batter is so dry. I finally added more milk, oil and berries (plus some vanilla) the last 2 times I made this and hubby and toddler loved them. I will have to search for a better recipe (or keep altering this one). Even so, they do sag a little in middle when done as others have also discovered...

nothing special, making it a waste of expensive pecans. might be better with a little amount of chocolate chips. I've never enjoyed blondies, so that could be part of it.

Dried Cherry Cake

i was looking forward to this since i saw another review that said how it stays moist for days...when fresh, it wasn't moist at all, but when i wrapped it in foil that night it became super moist! however, the flavor was still lacing even though i added more cherries than stated. probably will not make agai with so many other recipes out there...

i even added extra sugar, cinnamon and vanilla to the batter and they were still a little bland. i baked them a little less than stated (according to other viewers) and they were still a little dry as well.

Cranberry Icebox Cookies

i used too much almond extract because i was making a half batch and overfowed when trying to measure out a measly 1/8 tsp, but i think it worked in my favor (i love almond extract). these tasted so yummy! i thought they would be crispier and was pleasantly surprised by the softer texture. i will definitely be making these again with my leftover cranberries!

Eclair Cake with Chocolate Ganache

this was very easy to make but did use a lot of bowls, utensils, etc. and time. i had a feeling the faux cream filling (made with pudding mixes) was not going to be that great, and it wasn't. the crust got a little soggy for my taste (that dough probably really wasn't mean to be a bottom crust of a "cake"). will most probably not make again.

it did need more coconut for my taste (and even more chocolate), but this is the second-easiest pie i make and it's worth soooo much more than that! i made it 2 times in the first week!
