Mom's Zucchini Bread

This is the first time I make and eat zucchini bread. It's so different! The recipe works perfectly as is. The only thing I had to change was the walnuts. Didn't have them, didn't use them... Maybe next time.

Chantal's New York Cheesecake

Made the recipe with minor changes: in a 9in pie pan, made for 4 servings, it fits great, except, make more crust than what the recipe calls for at 4 servings. Baked for 32 minutes and left in the oven with a tiny opening to cool for less than the long hours the recipe calls for. Cooled for about 1 hour. I added pure chocolate powder to the crust just because I wanted to try it. Hope this helps.

The amount of flour needed in mine was way more then the recipe calls for. The dough needs to be coming off the sides of the bowl, still soft and a little sticky, so keep that in mind when adding the flour. I almost doubled the amount of zest in "filling", and added zest to the cream cheese topping I made. on the day it still didn't taste much like orange, but the next day, its full of flavor. I missed buttermilk in the dough, and some orange taste, so next time, I will add 2 spoons of orange juice to the milk. That should do it!

General Tsao's Chicken II

Ok, I tried to bread the chicken the way it describes, but it didn't work well for me as the egg formed loose crumbs and the chicken poorly breaded. So I dipped each piece in egg wash and threw in a bag of starch. The other thing is, this is reaaaallly sweet! Don't skip the salt! Seriously, I put half the salt because of all the reviews and was sorry I did. If you like it less than super sweet, cut back on the sugar! Made just to have a go at it... Didn't love it... The family didn't care much for it either. :(.

Old Fashioned Pineapple Upside-Down Cake

This IS moist and super fluffy when your follow the directions exactly! At least mine is. Mine did take longer to cook, but I figured it was because I used a thick glass baking dish. Unfortunately for me, it was way too sweet for my taste and I didn't even add a whole cup of brown sugar to the butter/pineapple "topping"! :( maybe cuz I need had pineapple upside-down cake before... Anyway, texture, moisture, everything great... But I don't have a sweet tooth...

Easy Morning Glory Muffins

Took Ashleybegood's advice and reduced oil to 1/4 cup and added 3/4 apple sauce, except it was a little sweetened. Took another cook's advice and reduced sugar to 3/4 cups. Omitted the nuts cuz I didn't have them, and added about 1/2 cup of fresh pineapple. I absolutely love them, tho next time I will make it 1/2 oil 1/2 apple sauce, also i will up the sugar to 1 cup and top with oats.

Homemade Mac and Cheese

I added evaporated milk and a pinch of mustard powder as suggested, cuz it was my first and I really wanted to get it right, but it was bland... :( so creamy and beautiful, but frankly, the stuff that comes in a box is better.

Microwave Lemon Curd

Well, I have never had lemon curd before, but had to try because it seamed interesting and more importantly so easy to make. It cooked in exact 6 minutes. I whisked mine instead of just stirring to avoid lumps. Its really zesty! I don't know if the family will enjoy, but it seamed to go perfectly and I believe that is how its supposed to taste....
