Garlicky Beet Delight

I made this with yellow beets and found it a beautiful and delicious dish. My culinarily unadventurous family wouldn't touch it, however. If you like beets, this is really good.

Vegetarian Kale Soup

I used 4 cups homemade broth instead of water and bullion cubes. I also added fresh basil from the garden. Very yummy!

Spiced Baked Apples

I omitted the nuts due to a nut allergy and had no problem with baking time. I had them in a hotter oven with other food and after about 25 minutes turned off the heat and kept them in the hot oven until we were ready for dessert. They were perfect.

African Curry

I changed the recipe a little -- I used vegetarian chicken pieces, vindaloo seasoning instead of curry, and added tomatillos. I thought it was good, but not nearly as spicy as I expected since the vindaloo seasoning is quite hot without coconut milk. I added more salt than indicated as well, and,as others suggested, added brown sugar. Overall, a good dish. I will make it again.

Roasted Tomatillo and Garlic Salsa

I thought there was too much cilantro, and in the end, something was missing. It was usable, and my husband liked it however. Very easy to make.

Creamy Roasted Vegetable Pasta Salad

I thought this was very good, although I did make a few alterations due to food allergies and what I had. I used Quinoa elbow noodles, ume plum vinegar instead of red wine vinegar, and I only had one red pepper, one onion, and 2 chopped up carrots for veggies. I am sure I will make it again.

Big Al's K.C. Bar-B-Q Sauce

Excellent! I was light on the cayenne and chilli powder for the kids, and used apple cider vingegar instead, but it was great. Hubby loved it on pulled pork.

This was very good and very easy. I didn't have any cilantro on hand, so I omitted it. I am sure it would be very good. My husband liked it, and my picky children were split, one wouldn't eat the potatoes, but had everything else, the other wanted more tomatoes.

Spinach and Sun-Dried Tomato Pasta

This was really good, although I also altered it. I used gluten free pasta, soaked the sun-dried tomatoes in water, omitted the pine nuts and pepper flakes and spinich, added Kale, artichoke hearts and pepperoni. The whole family liked it.

Butter Cream Frosting II
