How to Make Pumpkin Cheesecake

Reviewed: Nov. 30, 2013
This was an excellent cheesecake. Taste was definitely 75% pumpkin 25% cheesecake. I followed the instructions exactly EXCEPT (1) Did not use a thermometer but baked for 1 hr 45 mins until I got that "slight jiggle in the middle" :) and (2) Used a plain ol' baking pan for the water bath and it worked out fine. The only thing preventing 5 stars was the crust. Delicious, yes. But a bit sticky and hard to cut. May go traditional graham cracker next time. THanks Chef John!

Quiche Lorraine II

Awesome recipe. I made it with egg whites, 2 egg whites = 1 egg. Also used cheddar instead of swiss, ham instead of bacon. Added mushrooms, and cooked them + onions w butter spray before adding. This cut down on grease and calories and tasted great!

Baked Ziti with Turkey Meatballs

Made this. Only thing I would say is a recipe for tomato sauce is needed. I did crushed tomatoes (no oil, no salt, no spices), added onions, mushrooms and garlic sauteed in olive oil, salt to taste, fresh basil, oregano and a couple of thyme springs. Simmer for 2 hours.

Pumpkin Cheesecake

Reviewed: Dec. 26, 2008
So good and SOOO rich! Made it for christmas yesterday was a hit. Turned out perfect. Used a springform pan, no water bath or anything. After cooking time, I let the cheesecake sit in the oven with the door open for 1 hour, then I cooled on a rack in kitchen for 1.5 hours, then fridge overnight. Served it for dinner next day. It set perfectly!
