Raisin Sauce for Ham II

I used this recipe twice. It is beautiful! Word of warning: the first time I cooked it ahead of time (same day of meal) thinking that when I warmed it up for the meal, that it would look and feel the same...wrong! It was lumpy and kind of gross-looking...I didn't add water as others have done because I was afraid to affect the taste. So I served it lumpy and people still liked it! The second time I prepared it shortly before the meal and kept it warm on the stove and that worked out perfectly. Delicious sauce!

Honey Baked Apples

Very nice in taste and appearance -- I prepared exactly as recommended. Because of the basting required, my apples probably could have used another 15 minutes for easier cutting through with just a fork or spoon. Beautiful dessert.

Italian Style Pork Chops

This one's a winner! I will reduce the breading mixture to half next time since I had tons left over! I'll also reduce the butter to half for the same reason. When I breaded the chops, I think I included too much of the fine crumbs, resulting in some sogginess -- next time I'll make sure I only use the coarser crushed pieces (they came out golden & crunchy). I had no Italian Seasoning so I liberally sprinkled the breading with basil & oregano & it was still delicious! Highly recommended.

Cabbage and Apple Slaw

Delicious! I messed with it quite a bit because I thought I had yogurt, but didn't. Anyway, instead of yogurt & sour cream, I used mayo for the same quantity of both & instead of minced onions, I used 3 large shallots (just the white part). I added raisins & mandarin orange pieces because I saw that combination in another coleslaw and it turned out absolutely great! No salt or pepper required. I gave this recipe a 5 because it's very flexible! I intend to use the yogurt & sour cream next time just because it sounds so good.

Orange Soy Pork Loin

This was so good and so tender! I followed advice from others and used half the Rosemary (I love Rosemary but others find it a little much). I didn't have an oven bag so I cooked a 4.5 lb. roast in a large roast pan at 350 for 2 hrs. Had no red onions so used regular onions and it still turned out great!

Chocolate Ganache

Incredible! I've never even heard of ganache and this seemed so easy that I thought I'd try it. It was fantastic. I had most of the dark chocolate, but had to throw in a bit of semi-sweet to top it off. It still turned out great. When it cooled but was still liquid, I poured it over a (banana) cake and let it drip over the sides. Everyone went bananas (sorry) about it!
