Broccoli and Onion Casserole

Very nice. I think a nice variation could incorporate little garlic as well. Maybe next time I will saute the onions in garlic rather than just boil them. A little cracked black pepper would be a nice addition to the sauce as well.

Chicken Diane Style

Easy to prep, easy to cook, and tasted great. I think next time I will try a dry sherry in place of the brandy. I think that would give the sauce a slightly stronger presence.

Maple Glazed Chipotle Goat Cheese Lamb Burgers

I really looked forward to making this, but unfortunately, it fell really short. At first, I was enticed by the combination of flavors - spicy, savory, sweet, and sour - but unfortunately the chipotle peppers completely overwhelmed the dish. The recipe did not call for draining the chipotles from the adobo sauce. This made the patties very soft and difficult to work with. The burger just would not stay together. If I make this again, I would substitute fresh chopped jalepenos for the chipotles and drastically reduce the amount so that I could taste the other flavors.

Grilled Marinated Salmon

Very, very nice marinade. At first I thought the ingredients might be too mild. I thought of substituting fresh ginger for the powdered, sesame oil for vegetable oil (although I did use extra virgin olive oil) and possibly bourbon for the rice wine vinegar. But, without a doubt, I was pleasantly surprised by the original recipe's flavor. The sugar caramelized on the outside of the fillet when grilled and added some crunchiness. Definitely a repeat dish for my family.

Almond Wild Rice

Very easy to make. I thought it needed a bit more sweetness than the raisins alone imparted. Originally, I added a tablespoon of sugar and that helped a bit. I will reheat the leftover tonight with cooked Granny Smith apple slices caramelized with butter and sugar. I think that will achieve the taste and texture I am looking for.
