Chocolate Chip Banana Muffins

I made these yesterday. I had a banana and a half that was getting really ripe and didn't want to throw it away. I also had some chocolate chips left from another recipe. These are the absolute BEST banana muffins I have ever had!!! I followed the recipe except I added a little cinnamon and used milk because I didn't have sour cream or yogurt. They were so moist...just yummy!! I also baked them in my convection oven instead of a conventional oven and they were perfect!! I'll definitely make these again.

Classic Clam Chowder

We love clam chowder so I tried this recipe because of the reviews but We didn't care for it too much. It was bland and didn't taste too much like clam chowder. It tasted more like potato soup. I don't think I'll be making this recipe again.

American Frittata

My DH and I loved this! The only changes I made were using only 2 potatoes (small red skin), 6 eggs instead of 8, and I added a small can of mushrooms and some frozen broccoli. I put the broccoli in with the cubed potatoes to cook. Then in the cast iron skillet, I used olive oil and 3 T. butter to saute the onions and mushrooms. I added a dash of hot sauce and followed the rest of the directions. It was very good and we'll have it again soon.

No Bake Cookies V

I made these using the suggested modifications to the cocoa and sugar and they never set up! They were soft and "runny". They tasted good but I won't use this recipe again.

Blueberry Pie

I read the reviews and took their advice and used 4 T. corn starch and it was perfect. The only thing I would do differently next time is omit the cinnamon. I don't care for the cinnamon taste with blueberries. I also used Splenda instead of sugar to cut a few calories. Otherwise, hubby and I enjoyed it very much.

Coconut Macaroon Brownies

I made this with no alterations and baked it for the called for time of 45 minutes. It was very dry and bland tasting. I won't make this again.

Creamed Peas and New Potatoes

This was delicious! I altered the recipe a little bit by using 1/2 c. heavy cream instead of milk. I didn't have English peas so I substituted with Birds Eye Steamfresh frozen peas that I microwaved for only 3 min. so they wouldn't get overcooked. I added some parsley when I added the salt and pepper just before serving. I served this with baked stuffed salmon and it was wonderful. My husband said he could have made a meal out of this recipe alone....and he loves salmon! I'll definitely make this again.

Baked Parmesan Perch

We have a lot of frozen lake perch that my husband caught last summer and I'm always looking for different ways to fix it. I made some adjustments to this recipe to suit our tast and it was delicious. First of all, I used Panko crumbs instead of bread crumbs. We like the flavor and crunchiness of the Panko crumbs better. To my Panko crumbs I added dried parsley flakes, lemon pepper seasoning and parmesan cheese. It was wonderful and I'll use this recipe again and maybe try some other ingredients also to the crumbs.

Zucchini and Tomato Casserole

This was very good with the lemon pepper baked lake perch we had for supper. I made a couple adjustments only because I leftovers in the refrigerator. Instead of fresh tomatoes I used the leftover stewed tomatoes and had a bag of frozen yellow and green zucchini squash in the freezer. I topped it with parmesan cheese before I baked it and it was delicious! We'll have this again.
