Cottage Cheese Salad

I did this with onion, carrots, broccoli, raisins, and sunflower seeds. It was okay - next time if I have the suggested ingredients in the recipe, I try that.

Shortcut Chicken Manicotti

Major mod here -- I didn't have manicotti, so I made a casserole. I put a layer of cooked past in a caserrole dish, then layered the spinach/chicken mix on top, then another layer of pasta, and finally the sauce. I'd add lots of spinach to this -- it tastes good. Oh... and then layer top with breadcumbs and bake. In last 10 minutes add grated cheese on top.

Pad Thai

I liked it! Be sure to squeeze fresh lime on it when it's served. Mine needed more sauce - twice/triple what was recommended. I was expecting it to be a more vibrant orange color, but it wasn't.

Atomic Tuna Salad

I didn't have cauliflower so I used carrots. Chopping all the veggies finely as mentioned turns the salad into a colorful spread. Following some reviewers suggestions I added garlic powder, dill (I used pickle juice), and pepper. This salad could easily carry many combinations of flavors.

Mushroom Rice

Easy to make and flavorful. Next time, at stage where the rice is to be cooked, I'll move everything into my rice cooker for ease. Another review says that for rice cookers, the broth/rice ratio should be 1:1. Keep mushroom in large pieces so as to vary the texture. Add sunflower seeds or almond slices for a little crunch

Fruited Curry Chicken Salad

A little too much onions so I cut it in half. I doubled the amount of curry. I'd cut the chicken into very smaller pieces. I reduced the mayo by 1/3 and replaced it with yogurt. I think it would be good in a pita for lunch.
