Vegetable Lo Mein Delight

I used sugar snaps instead of snow peas. I also added water chestnuts with them. Also used leftover grilled chicken at the end.

I didn't have leeks so I used what I had; 2 green onions, half stalk celery and 1/4 cup onions. I used half and half instead of milk. I saved some of the asparagus tips and added them to the pot after blending and simmered for about 5 minutes. I also added a half teaspoon of cayenne pepper. It turned out great.

Chicken Pot Pie IX

This turned out great. Everyone enjoyed it. I followed the recipe almost exactly except I cooked the vegetables and chicken in broth, as others suggested. I also used a little more broth, about 1/4 cup more than the recipe. I'll probably add a touch more seasoning next time.

Best Ever Pie Crust

This is the first time I made a pie crust and it turned out perfect. I doubled the recipe to make 4 chicken pot pies in individual bean crocks and I had just a little left over.

Stuffed Eggplant with Shrimp and Basil

This turned out great. I used 2 eggplants. I started the saute with 1/4 cup onion and a tablespoon bell pepper. After a few minutes, I added the eggplant, garlic, 1/2 teaspoon fresh parsley and 1/2 teaspoon fresh oregano. The shrimp went in after the wine, 2 minutes before the end of the saute. I used 1 cup of regular bread crumbs instead of the Italian seasoned and baked for 35 minutes. My wife doesn't like eggplant but she ate half of what I made ;)

Eggplant Parmesan II

This came out really good but I had some issues with the proportions in this recipe. Try using half the amount of eggplant and twice the amount of sauce and Parmesan cheese.

Green Bean Stir-Fry

Great recipe! I steamed the beans in the microwave for 3 minutes before stir frying. I'm thinking that next time, I will steam for 2 minutes and make the sauce with a little less peanut butter to make the dish a little lighter.

Kashmiri-Style Kidney Beans with Turnips

I have lots of turnips coming out of my garden right now and I had to find different ways to fix them. I came across this recipe by searching this site for "turnips". This was my first attempt at an Indian dish and I am very pleased with the results. If you like to have all your ingredients prepared ahead of time, you should add a little extra time for that.
