Green Bean Casserole Remix

Good Idea for GF and DF family. Thicken the sauce with tapioca. Better day after -- think next year will refrigerate the night before. What's there not to like--bacon and mushrooms!

Peanut Butter Brownies II

Used Light Domino sugar, GF flour, Xanthan gum and soy milk. Made the peanut butter topping first and then the brownie mix. As the brownies cooled, they got better. Might use the peanut butter mix for PB pie. YUMMY.

Quick GF and DF Chicken Cordon Bleu

Made 4 Bell and Evans Chicken burgers in a pan. Mixed sauce--1/2 container DF sour cream, mustard and honey. Lightly browned burgers in skillet with olive oil. Tablespoon of sauce, slice of ham (chipped worked well), sauce, slice of DF Swiss cheese, sauce, ham and sauce. Put the lid on and burner on low-med--melted everything and it was yummy.

Cheesy Potato Casserole

Changed the recipe for my dairy-free family. Tried dairy-free sour cream and regular mayo. Next time will do all mayo. Added bacon and green onions in the mixture and on top. Definitely cook full hour at 400 degrees. Tried to cook longer and lower since sharing the oven with other casseroles--no go. Nice top. Good flavor. Used Country Hash Browns.

Pennsylvania Coal Region Barbecue

We enjoyed this for a quick meal--over organic blue chips with some cheese and a little ranch dressing. Not the usual tomato base BBQ or sloppy joe--definitely easier on the stomach. Liked the contrast in the flavors.

Easy Honey Mustard Mozzarella Chicken

Used 8 boneless thighs. PA DUTCH Honey/Horseradish mustard and Hormel bacon pieces. Just enough DF cheese to lightly covered the top. Yummy!

Spinach and Sun-Dried Tomato Pasta

Hubby said this is a keeper. We are a gluten and dairy-free family. Have outstanding penne pasta, used a 8.5 oz jar in juliann sun dried tomatoes in herbs and fresh spinach. Toss with hot, cooked pasta and added spices--excellent. Dish was a snap to make and had zip!

Who knew eating your veggies would be so good? Love, love the ginger with the carrots. Skip the fancy baby carrots and cut up some local grown carrots--works just as well and your carbon footprint is next to nothing. Eat as side and will be making to take to family dinners.

Crunch Bar

Had to use gluten-free crackers--they are very thin and increasing the recipe to 1.5 cups of butter/sugar was a bad idea. I have used the recipe as described and still am having trouble with consistency. It seems simple and they are very good. Any ideas?
