About this Cook
Since I can only bake and not cook, it's a good thing I'm single (never married) and don't have to think about what I'm going to feed a husband and/or kids for supper every night. For me, that would be a nightmare!(Not the husband and kids part, but the "What's for dinner?" night after night part.) Me, I can eat the same thing almost every night and it's just fine, although I DO like a bit of variety every now and then, of course.
My favorite things to cook
Cookies, muffins, quick breads, also the occasional pie and batch of coffee pulla (Finnish braided cardamom bread).
My favorite family cooking traditions
My maternal grandmother made our holidays. She's the one who did all the cooking and baking for them -- the turkey on Thanksgiving and Christmas, the lutefisk on Christmas Eve (and she and my grandfather were Finnish, not Norwegian!) I could never get into the lutefisk thing myself. That gelatinous, quivering blob of lye-soaked cod never did anything for me but kill my appetite. I guess it's an acquired taste that I never acquired. And, we would have ham on Easter. Since Gramma passed, over 21 years ago now, holidays are pretty much just ordinary days for me.
My cooking triumphs
Winning a blue ribbon at the county fair with my chocolate chip cookies that use two kinds of chocolate chips (half semisweet and half milk chocolate). I also won a blue ribbon at the same fair -- Brooklyn (Connecticut) Fair -- for date nut bread. I'd completely forgotten about that ribbon until I saw it the other day!
My cooking tragedies
Once, when I was making a batch of pulla, when the oven reached temperature, I forgot to switch the oven from "preheat" to "bake," and the crusts on the loaves came out burned! Fortunately, I now have a nice new oven that automatically switches to "Bake" when it reaches temperature so I don't have to remember.

Finnish Pulla
Being of Finnish descent myself, I grew up on this delicious bread, and it seems that just about everyone who makes it has a slightly different recipe, but they're all good. An extra delicious way to eat pulla is to toast it so that it's warm and your butter or margarine just melts into it. YUM!!!

Finnish Kropser (Baked Pancakes)
One of the many delicious recipes my Finnish grandmother used to make, only she called it pannukakku (oven pancake), and my favorite way to eat it was warm from the oven with either lingonberry jam, or whole berry cranberry sauce. YUM!!!

Swope Bread
One of the best recipes I have in my extensive recipe collection! So easy to make. Rich, moist, and delicious! Low in cholesterol because it contains no eggs, nor shortening of any kind, but it is a bit high in sodium. The recipe I use is for a single loaf. We use this bread for Communion at church.
