About this Cook
I'm a stay at home grandmother who loves to bake.
My favorite things to cook
Quick and easy recipes! A simple supper thrown together with whatever is in the fridge. I call it recycling! I take leftovers and create something new. My favorite to make for breakfast is homemade biscuits.
My favorite family cooking traditions
Memories of baking with my Mom and grandmother, and holiday traditions, like homemade eggnog. My sons enjoyed baking when they were young, now I bake with my grandchildren and nieces. I'm just passing along what I hope will be memories for them.
My cooking triumphs
A pie that one first place in a pie baking contest at our church Bazaar. My Mom won second place and my godmother, third place. They taught me everything I know about baking!
My cooking tragedies
Burnt roux! And burning myself with hot roux! Ouch!!

Cajun Deep-Fried Turkey
I usually purchase ready made injector but we have eliminated black pepper from our diet and reduced our salt, so I will be using this recipe from now on and just substitute white pepper. For those looking for garlic juice and onion juice, it can be found at most larger grocery stores, just ask where to find it. In addition to following another reviewers advice, I made only half which was enough for a 12 pound turkey. But I thought it would be too spicy with both hot sauce and cayenne, so I skipped the cayenne and it was perfect for adults and children alike. I found it needed some extras so I added a few shakes of nutmeg, 1 Tbsp of granulated onion and granulated garlic, 1 Tbsp of prepared mustard and 1 tsp of ground mustard, 1 tsp chili powder and 1/2 tsp chipotle sauce. We got rave reviews from the family!

Cherry Cheesecake
My entire family loves this cheesecake! We vary the fruit, or use none at all. You must use "real" condensed milk and cream cheese along with the exact amount of fresh lemon juice. The bottled lemon juice won't work. I hate to be gross here, but some people don't know about contamination. I am finicky about people sticking their fingers in the mixing bowl and no one licks off a spoon and sticks it back in again! If you contaminate any recipe you ruin it and one like this will not set!

Cowboy Cookies II
The very first time I tasted these cookies was at my Aunt's house when I was a little girl. I copied the recipe that day and have been making them ever since. They have become a favorite of my family and whenever they ask for cookies, this is what they want. Sometimes I use half shortening and half butter for a softer cookie. Other times I use all butter for a richer cookie. Several times I substituted whole wheat flour for the all purpose flour and no one suspected a thing! There are so many variations: use M&Ms or Reeses Pieces, or white chocolate chips and macadamia nuts instead of chocolate chips. Sometimes I add a cup of chopped pecans also. Now that I am a grandmother I am making these cookies for a new audience! Just baked a batch to bring to my Marine son and his family! The best recipes are the kind you can vary with your mood, the occasion, and the ones who will enjoy them. This is that kind of recipe! If made with shortening they will keep a long time and can be shipped to someone away. Wrap 2 back to back in waxed paper or plastic wrap. Place packs in a zipper bag and then in a sturdy box for shipping. There should be minimal breakage.
