Easy Lemon Cookies

Lemon Chicken Piccata

This was good but like other reviewers my sauce was bitter. I made mine with white wine instead of chicken broth. I did not use any of the pith, only the rind and juice of the lemon. I ended up dumping the sauce and starting over...only to have a similar problem. I salvaged the sauce with sugar but I think next time I will use chicken broth instead of wine. Otherwise, we really like this.

Apple Crisp II

I followed the recipe with the exception of leaving out the water and adding nutmeg to the sugar and cinnamon. This was very good! I made this early in the day and pulled it out to bake while I was cooking dinner. The top was crisp and the apples were sweet-tart and soft. I think I sliced some of the apples too thin, they came out like applesauce. Next time I will make bigger chunks of apple... but otherwise this recipe is a keeper.

Enchilada Casserole

I thought that this was pretty good. I made this with the easy enchilada sauce, also from this site. I did use ground turkey instead of tempeh, that I seasoned it with some cumin and chipotle pepper. Overall we all liked it but I felt like it needed more "substance". Corn chips might be good.

Quick Enchilada Sauce

For a quick, easy to make replacement for canned sauce, you can't beat this. I made it as written only adding 1tsp of additional chilli powder. I also like that I have control over what goes in this sauce. It will be a staple in my kitchen! Thanks Tammy

Asopao de Pollo

I couldn't find adobo seasoning, so I sub'd chipotle peppers in adobo (4 de-seeded and finely chopped) and omitted the red pepper flakes. Fabulous recipe! I will make this again!

Pancakes with cinnamon

Nutty Wheat Bread

I used my bread machine to make the dough. I then put it in a bread pan, let it rise, then baked at 350 for 35 minutes, tenting it after 15 minutes. Delicious!

Zippy Summer Shrimp II

This was delicious! I used 1 tsp garlic powder instead of sliced garlic (I was out of fresh) and I used about 1/2 the lemon juice. I used tail-on peeled and deveined shrimp, put it in a plastic bag, doused it with olive oil (not a 1/3 cup, much less) and poured the seasonings over. I mixed it up and let it marinade about 30 minutes. I cooked it over medium high heat for about 5-6 minutes and it was perfect! I will make this again!

Creamy Spinach

This dish was very good. I would have given it 5 stars except for two things. I used fresh spinach and I thought that the amount of nutmeg was a little too much. I would use 1/8 tsp. nutmeg next time. I will make this again! Thanks

Slow-Cooker Chicken Tortilla Soup

I emailed this recipe to my husband to make for dinner one day when I was working. He followed the recipe as written and it was good but I would make the following changes: I will use chopped tomatoes instead of whole tomatoes and add another teaspoon of salt, I would cut the corn in half, and add a chopped onion and a little cayenne for more heat.
