Cheesy Potato and Corn Chowder

Absolutely wonderful! I added 1 can of creamed corn, 2 10oz cans of broth, 1 can of water, and 1 chicken bouillan cube. This soup is outrageously good!

Pizza Without the Red Sauce

Really really good. Word to the wise ... if you are making your own crust make sure you make it thick enough to withstand all the toppings...or cook the dough first - I made the mistake of adding the toppings to my fresh dough and it just wasnt sturdy enough so we had to use a fork. The toppings work great together. I will make this again for sure!

Chunky Tomato Potato Soup

Super Yummy! I always add my cornstarch to a little bit of water and wisk it ... add the water mix to the soup - it never clumps this way.

Beef Barley Vegetable Soup

Superb! I used chopped stew meat. Threw everything in but barley ... also used 2 bay leaves. Added the barley 45 min before it was done. Cooked everything for about 8 hours. Delicious!

Chicken Fiesta Salad

This is outstanding. I added 1/2C sour cream to the bean/corn mix per another suggestion and it really made the dish. Me, hubby, and my 4 kids ages 15, 14, 11, 10 all LOVED it.

Oatmeal Baked Chicken

Ok so I was sooo excited about making this, I made sure I had all the ingredients...or so I thought. I ended up having grits and not oats. So I did what I do best and improvised. I used Raisinbran Crunch. Threw all the ingredients in the food processor and 40 min later voila! A delicious dinner. Hubby said best breading he's had!

Apple Pie in a Jar Drink

Very sweet. I wouldn't sit and eat an entire apple pie and I couldn't drink an entire glass of this either. Way too sweet. Maybe next time I will try with no sugar or atleast sugar free apple juice.

Chicken Enchiladas I

My husband calls this recipe my secret weapon...whenever he is mad at me this is what I make him. Works miracles. I too omit the water and use about 8oz of tomato sauce. I top it with medium picante sauce. It takes me about 1hr 20 min start to finish.

Cinnamon-Sugar Popcorn

I popped a bag of popcorn in the microwave. Used 6T of butter, omitted salt and the vanilla...I think there was plenty of "sauce" for the 1 bag of popcorn. Delicious!

Awesome Slow Cooker Pot Roast

Really good. I added 3T of cornstarch to help thicken the gravy then added a half block of cream cheese and about 1/3C sour cream. Served over noodles.

Egg Salad I

Added finely chopped green and red pepper to this to add some color and some texture. I used 6 eggs, 2.5T of mayo with olive oil, 1T yellow mustard, 1T of dill relish. I omitted the onion. We just don't like raw onion. Yummy.

Fresh Asparagus Risotto

This is great. I added a 14.5 oz can of fire roasted diced tomatoes with garlic - drained. Add it at the end with the asparagus. I blanch the asparagus as well. I've made a lot of risotto recipes and this one is my fave!

Egg Salad Sandwiches

just ok. I don't like raw onion so I thought this recipe would work out for me but I found it was missing the extra crunch and texture from using actual relish. I also think the relish gives it a nice fresh taste that you don't get when you rely all on seasoning. Sorry but this was just ok.

Baked Teriyaki Chicken

Didnt have any cider vinegar so I used rice wine vinegar. I also used boneless chicken tenderloins. I doubled the sauce recipe and baked for 22 min covered in foil, flipped and baked another 22. Absolutely the best teriyaki sauce I have had. This is great!

Barbie's Tuna Salad

This was excellent. I must say though I ended up using 6 cans of 6oz tuna to feed a family of 6. Sure I had some leftovers but not much. I think just adding the mayo (I used kraft made with olive oil) a little at a time until you reach the consistency for your liking is the way to go. The curry addition is absolutely fabulous!

Slow Cooker Green Beans, Ham and Potatoes

This is missing the KEY INGREDIENT to a great "like your grandma used to make" taste. 2T of bacon grease. Put the bacon grease over the green beans to add extra flavor. I always use smoked sausage or keilbasa. Another great tip is to sprinkle sugar on the green beans NOT salt. If it needs salt to taste let the person eating do that so you dont over do it. Typically mine never needs any salt and is perfect the way it is.

Roasted Chicken with Risotto and Caramelized Onions

Hubby says give it 6 stars. I used 2T balsamic, added garlic with the onion, added artichoke hearts with the chicken. Other users are right cant really tell the chicken was roasted so maybe next time I'll use regular...also used white grape juice b/c I didn't have any wine :(
