Chicken Jumble

Spiced it up a bit as others did with onions and garlic. Added chicken broth, stewed tomatoes, mixed veg. and seasonings. Simmered and shredded chicken. I thickened the sauce with flour. Served over rice. Hubby loved it. Will make again.

Blueberry Crisp II

Liked it a lot! Very easy. Picked some blueberries and decided to treat myself. I did double the topping and added a tablespoon of butter to mayo. The topping should be sprinkled and then smoothed out. Do not press down which might have caused doughy texture.

Easy Mint Chocolate Chip Ice Cream

I was pleasantly pleased that this ice cream recipe is so easy. The biggest plus was that the ice cream is great. No crystals. Not rock hard after freezer stay. I changed the original version by using 2 cups whole milk; 1 cup half and half; and 1 cup heavy cream. This is an excellent base that one could add any flavoring choice.

Beef Mac Casserole

Came home last night and did not have a clue what to have for dinner. Had a 1 1/2 of ground beef in fridge and tired of burgers. This was perfect and I started it late. Another HIT! My two men in the house loved it! Maybe next time I will 2x's it because they complained not enough for lunch on the following day.

Crispy Fish Fillets

Excellent! I have never been able to fry fish, and tonight I did. Used the advice of dredging in flour first, adding extra seasoning into the egg mixture and did not have potato flakes but used crushed RITZ crackers. I had those frozen flounder pkgs and sometimes those are really fishy tasting, not this time!

Chocolate Fudge Pound Cake

Sooo easy! Yes it is a box cake, I have been there done that scratch cake stuff. When one works why scratch...I would if I had the time. I followed the directions completely using a 10" by 4" angle food cake pan. I guess my only complaint was it was a little dry so drizzle with what ever you like or as we did drizzle and a scoop of homemade ice cream. I definatley will make this cake again. Using different mixes sounds like a great idea, for instance the strawberry cake and the lemon cake mixes.I give it a 4.5 because it is not dense enough to be a pound cake.

Fried Mozzarella Cheese Sticks

Very easy if you set everything up prior to start. I used a cooking thermometer and a cast iron frying pan. Cut the mozzarella sticks in half and put them in the freezer. I did not have Italian b.c's. Just added seasonings to the regular b.c.'s I had to taste. I did the double dip, using the one wet/one dry method and used a fork to turn and move sticks. The prepared sticks were placed on a cookie sheet and then put 6-8 in the oil for 30-40 seconds. Placed on cake rake with paper towel. This is basically what most reviewers said and they turned out wonderful with rave reviews.

Pineapple Cake I

Not surprisingly this cake has a custardy taste. I topped with crushed pecans and baked. The easy part is exactly right. Good cake, just not what I expected.
