GA Peach Pound Cake

The western slope of Colorado is also famous for its peaches and it is prime Palisade Peach season right now. Based on some previous reviews I added about 1 cup additional peaches. It was wonderful. I also dusted the pan with a cinnamon and sugar blend instead of just sugar. Fantastic rich taste and it made for a fragrant house too.

Fresh Peach Cobbler II

I agree with a previous reviewer, too much shortbread, not enough peaches. Also, I found when mixing the shortbread it was way too stiff, so I mixed in more milk. It was still way too stiff and the shortbread was dry and more biscuity than I like.

Easy Fruit Cobbler

So, so easy and so good! I have made this twice in the last three days. Last night I doubled this as I had 4 large overripe peaches that needed to get used. I also added some vanilla oil and was so glad I did. My husband and I both keep sneaking pieces of it and it will be gone soon. Only wish I had had some vanilla ice cream to scoop when it came out of the oven last night. Will make again and again.

Cinnamon Sugar Cookies

I don't understand it, I found these cookies to be very dry. I was careful not to overcook them because it was the first time I made them and I followed the recipe exactly. As I also live in Denver and altitude can affect the recipe was another reason I didn't want to overcook. I may try again, but with so many great cinnamon cookie recipes on this site, I probably won't. I also don't understand the amount of cookies that it says this recipe produces. 60, really? I didn't even get 36 from this and I was careful to cut the 1/4 inch thick slices recommended in the recipe.

Grandma's Homemade Banana Bread

Really good, really flavorful traditional banana bread with a dense moist crumb. A good banana bread or muffin is hard to beat right out of the oven and this one fit the bill.

Butter Pecan Rounds

Great cookie recipe! I am a lover of nuts and this has alot of pecans in it. This is a really great chewie, buttery cookie that has wonderful butterscotch flavor. I thought toasting the pecans was a great flavor enhancer and made the nuts oh, so crunchy.

Wonderful Meatloaf

Additional note (09/17/10)- I usually have fresh or frozen turkey or beef stock on hand and I cook the brown rice in the stock before adding to the other meatloaf ingredients. I believe it really adds to the flavor and using turkey stock doesn't detract from the beef flavor. I doubled the recipe, used brown rice and combined ketchup and barbeque sauce for the topping sauce. Loved the taste and also liked that rice was used.

Yogurt Glaze

I was looking for a way to use Greek yogurt that has become so popular lately and found this recipe. I made a pound cake that I essentially created the recipe and used this on top. I did change somewhat by also adding some almond extract and using highly concentrated vanilla oil in place of the vanilla extract. Really great flavor on top of the pound cake and I will look for other uses for this recipe.

Sweet Lime Iced Tea

I used Splenda rather than sugar and just loved the result, Very refreshing and flavorful iced tea great for a mid-summer icy drink. It never would have occured to me to use limes in iced tea, but this really works! 04/10/11 - I looked at this recipe again today to make and somehow it escaped my notice when I made it last year that the recipe directs that the tea bags should steep for 45 minutes. I never steep tea that long because it increases the tannins significantly and I have never liked the bitter aftertaste that results. I know I didn't steep for that long when I made it numerous times last year. Any comments about the long steep time from others?

Sweet Potato Pound Cake

09/07/10 - I made this again for a Labor Day barbeque and also made cinnamon whipped cream topping with cinnamon oil that just made this pound cake sing. I also used slightly more sweet potato and added some vanilla yogurt and an additional egg. I dusted the pan with a cinnamon/sugar blend instead of flour before placing in the oven to bake. This cake is just wonderful, flavorful and an elegant dessert. 07/15/10 I make large batches of homemade dog food twice a month and sweet potatoes is a key ingredient so I always have cooked sweet potato on hand. I made this last night and with two people in the household only 1/2 of the cake is left today. Great moist, dense and flavorful cake. Loved this, wonderful flavor and great color.

Ultimate Maple Snickerdoodles

Loved these cookies! Wished the recipe made a bigger batch because 3 dozen just wasn't enough. Addicting and so simple. I did add some vanilla oil to the dough though. I'll double the recipe next time.

Chocolate Icing

I discovered this icing recipe about a year and a half ago and have made it many times since then. I play with the proportions and the ingredients sometimes using cocoa and sometimes using Giradelli Ground Chocolate, or using half and half instead of milk. I love this recipe because the basic recipe has such a strong butterscotch taste, not caramel. I believe it is better suited to a brownie or cookie than a cake because it does stiffen so quickly. But that taste just rocks.

Strawberry Muffins

Never really contemplated using strawberries for baking since I like fresh strawberries so much, however since I had a surplus decided to make these and was so glad I did. Fresh out of the oven with a pat of butter, these rock. So good.

Corn Muffin Pancakes

I routinely add more liquid to pancake recipes as I prefer a thin pancake so that was the only reason I did not follow the recipe as given. However, I could not turn these pancakes after cooking the first side. Each one fell apart. We ate them anyway and I liked the taste, but do not understand how I can adapt this recipe so the pancake doesn't fall apart when turning.

Caramel Apple Bread

I doubled the recipe using 2 Pinata apples (a brand new hybrid) and 1 Mackintosh apple. I did not peel the apples before chopping them. It made one loaf and six jumbo sized muffins. I also added 1 cup of applesauce as the batter was very thick. Turned out great! The caramel topping is really wonderful. Additional comments: 10/12/10 I made this again and neglected to remember that I added applesauce the last time I made this recipe. It was so thick I could hardly stir it, so melted 1/2 cup butter and added to the mix just to make it stir-able. Turned out great, although the addition of the butter hardly makes it low-fat. I used 2 Granny Smith apples and 1 Jonathan. It is a shame the recipe as written isn't manageable when you are trying to stir the batter. Good result and taste, but I'll remember to make the note on the recipe that it needs something to loosen up this batter.

Crunchy Orange Muffins

I was out of whole wheat flour, so just used regular all-purpose flour. I doubled the recipe as my muffin pans are jumbo sized muffins and I wanted more than just 6 muffins. I also added 1/4 cup of orange yogurt and only used 1/4 vegetable oil. Even with all the changes they turned out great and the streusel topping is really wonderful, although messy to eat.

Mary Anne's Moist and Nutty Carrot Loaf

I ran out of oil and only had 3/4 cup. Even with less oil than called for, this bread was very moist. I used 1 cup white sugar and 1/2 cup brown sugar and it was plenty sweet. I added more cinnamon than called for and also added cardamom with the other spices. I only had 1 9 x 5 loaf pan so made the rest of the batter as large muffins. Surprised that this recipe calls for 6 eggs as most sweet breads usually only call for 1 or 2. Came out great and will definitely make again.

Mandi's Cheesy Potato Soup

1/22/10 Great soup, although I did change somewhat. I felt that there wasn't enough carrot and celery and also added 1/2 small onion. Chopped 2 carrots, 2 ribs of celery and onion together in food processor. Wonderful, creamy and thick soup for a cold, winter day. 03/03/10 Have made this soup several times since my initial review. I do really believe that adding more carrots and celery to the recipe results in a much better soup. This is a great basic potato soup recipe and have enjoyed finishing off the leftover soup. I use a homemade broth to cook the potatoes, carrots and celery in and find it truly adds to the depth of flavor of this recipe. Wonderful, flavorful soup.
