Homesteader Cornbread

This is a very nice, basic cornbread that I've made twice. The first time was with cornmeal that I got from the corn-grinding I'd attended that weekend. The second was made with store bought cornmeal. Same results. I actually love sweet cornbread--like the Jiffy mix kind :) My mom hates that kind and this reminds me of what I grew up on...though she never followed a recipe, I think it's very similar.

Southern Fried Green Beans

O. Wow. These beans are sooo yummy. I grew up with mama growing & canning our beans, and now my husband and I do the same, so my entire life I've eaten green beans at least once a week :) I dont know why it's taken me this long--I'm 27--to figure out this is the best way to make them! I gave it four stars for the changes I made, but it got my wheels turning and is a great recipe by itself. I cook the bacon, put it aside to drain (then I drain off some fat depending on how much is left), cook very thinly sliced onion in the bacon fat for a few minutes. THEN I add the sugar--Brown Sugar! I let it cook and caramelize a bit, then I add the green beans, partially drained and the bacon that I've crumbled. I like it in still fairly large pieces. Really...these are awesome, and I make them very very often. My husband and I struggled to eat a jar before...often I would throw half out. Now, we eat it ALL!

German Apple Cake I

Made this for my husbands birthday cake..he dosent like sweets but he DOES like Applesauce cake. I had tons of apples this fall and wanted to use them up! I give this 5 stars even though mine fell apart..I had a hard time getting slices onto plates. I think it was because I put it into a bundt pan not what was recommended. The flavor and texture (other than falling apart!) was wonderful. Moist with a crunchy outside. I just dusted with powdered sugar. I will make again and highly recommend it.

Angel Chicken Pasta

I helped my friend make this for a little "girls night" (wine and a chick flick!). I wasn't so sure about the condensed soup and dry dressing...I prefer to make my sauces from scratch with cream and seasonings. BUT this chicken was SO so yummy. Chicken was tender and the sauce..I kept dipping my bread in it and wanted to like my plate clean! I think it would be really great with some broccoli thrown in. Definitely make this!

Apple Butter Pork Loin

Best pork I've ever made. Perfect for my fall family meal. I DID follow another reviewer and pricked the meat with a fork all over, sprinkled with salt then marinated it in apple cider overnight. I baked for an hour then topped with the apple butter mixture(which was pretty spicy already, so I left out the spices called for here). My family raved over it the whole night--even my father who is a picky eater. My mom and husband agreed it was the best pork they'd had as well. DO try this.

Thai Pork with Peanut Sauce

I had to change quite a bit...I thought it was bland when I tried it as it cooked. So, I added more of every seasoning, then added minced garlic too. I left out the honey, thank goodness, plenty sweet without it. I tend to like my peanut sauces more spicy than sweet. The cilantro and chopped peanuts make it! YUM!

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

For flavor this gets a 5, but the dish was very heavy and greasy....if I make this again I will try to find away to cut out some of the grease.

Simple Scones

Very tender and moist. I just used cold butter and cut in with a pastry blender thing. Also, I left out the dried fruit and put orange zest in and brushed the tops with leftover cream before sprinkling with sugar. I will be using this as the base for all my scones from now on!
