Pumpkin Muffins II

Best Brownies

Slow Cooker Cider Pork Roast

Chicken Encilantrada

I loved this. The tomatillo salsa I used had green olives in it. I also added sweet red pepper and a cup of corn. I cooked this all together and added my broth at the end. I then lowered the heat and reduced it until it thickened. I added shredded-grilled chicken at the very end and served it in a soft taco shell. This was fantastic! Looking forward to the leftovers!

Sour Cream Coffee Cake III

I made this today in the 9 x 11 pan and was worried that it would be too skimpy. It wasn't at all. I cut the butter in half, but made the recipe as written except I put all of the streusel filling in the middle and then topped it with my own crumbs. I couldn't stop eating it!

Baked Honey Mustard Chicken

I made this tonight and it was a huge hit! My kids said it was the best ever. I followed the reviewers and cut the paprika in half. I also covered the pan (used a smaller one) with foil for half of the baking time. Served it with a side of cinnamon mashed-yams and almond rice. Def. a keeper!

To Die For Blueberry Muffins

These are indeed the best, but I forgot to stretch the batter out to 10 muffins this time and had an overflowing mess in my oven. Definitely makes more than the suggested 8. I use an ice-cream scooper to measure evenly. Also, heat the oven to 380 degrees and put up to 400 when you put the muffins in the oven. This helps with the density and no sinking muffins!

Shrimp Durango

Loved this recipe. I also used 2 tbs. butter and 1 tbs. olive oil. 3 cloves crushed garlic and about 1/4 c. lime juice. Next time will leave out the cayenne as the kids were raising their eyebrows over it (I loved the spice!). Will also serve over rice instead.

Caramel Heavenlies

These are so easy to make. I follow the recipe until I get to the coconut and the almonds. I just eyeball until covered sufficiently. I've made this the last two Christmas's and my guests think they are truly "heavenly".
