Slow Cooked Corned Beef for Sandwiches
The meat was amazing. I used Guiness and followed the directions to the letter. The only thing i wasnt a fan of was the cabbage cooked in the beer....made it sooo bitter. Next time i will cook the veggies separately. Otherwise fantastic!

Spanish-Style Chicken Stew
I have made this dish 5 times and i love it. I tweaked it a bit like most people do but tried to stay true to the recipe. I put in more carrots & potatos, i also add 1 sweet potato, I use 5-6 cloves of garlic and double the amount of red pepper flakes and paprika. I also use chicken breast instead of thighs and i dont put it in the oven (dosent thicken much). With those changes this is a fall/winter FAVORITE!!

Mexican Baked Fish
I used talapia (had on hand)also lined the bottom of the dish with 3 cups cooked rice. Squeezed lime over rice, layered sliced lime over rice and some of the salsa. Squeezed more lime juice over fish then followed the rest of the recipe. My husband has rated this in his top 5 favorites!
