Skillet Ham, Cabbage and Potatoes

i threw everything in the slow cooker in the morning, and it was to die for. i feel like the children of all the other reviewers on here-- "i didn't think i LIKED cabbage!"

Grandma's Hash Browns

ADD CRUSHED PEANUTS! I tried to make my own peanut-flavored "oil" and ended up just dumping in a bunch of peanuts that i had put through a coffee grinder... it was SO much better than the previous time that I made it. if it ever seems too thin, just add a little more cornstarch. My boyfriend and I enjoy heaping a bunch of sriracha on it, too... sooo delicious. (and great with dry reisling)

Super Duper Zucchini Muffins

These are unreal! I've made them twice now and the second time I made them healthier by using less sugar (and I use turbinado, which always tastes better in baking to me), more zucchini, and substituting apple sauce for the lard, and voila--they tasted even BETTER than the first time! also DON'T forget that sprinkling of brown sugar on top, it balances out the taste perfectly. my housemates hear the word "zucchini" now and their eyes light up.
