Hot Bean Dip

I've made this recipe more times than I can count. Everyone loves it. Can be served cold the next day as a dip. We also love to add it as a filling to burritos and enchiladas on Mexican nite at our home. Can be tweaked with whatever you feel like adding. Delicious!

Thai-Inspired Confetti Salad

Gorgeous, healthy and delicious! To make this papaya salad more authentic, I found a papaya that was still as green as possible and grated it to make up the bulk of the salad. I love peanuts on this but was disappointed to find last minute that I was out. I subbed toasted sesame seeds instead and it was good. The flavours in this salad are phenomenal. Thank you, I will make this again and again as it felt like I was right there in Thailand!

Black Bean Vegetable Soup

Simply awesome!! I brought back some fresh, beautifully fragrant Mexican cumin last week and this is the first recipe I've tried it in. A total winner! Since the cumin was whole, I ground it with the chili powder using my mortar and pestle, adding it to the garlic to cook for a minute. It is key in bringing the flavours out. The addition of fresh cilantro to the finished soup is divine, as other reviewers suggested. Ahhh, I feel like I'm back in Mexico! Will be making this again and again. Thank you!

Vegan Red Lentil Soup

I followed this recipe exactly except for subbing yam for squash, and adding sauteed mushrooms as other reviewers suggested. It was quite good, though not as tasty as I thought it would be. Definitely needs more liquid added to it as the lentils soaked up a lot of it and it had the consistency of a stew rather than a soup.

Zucchini with Dill Weed and Garlic-Yogurt Sauce

This was extremely simple and delicious! Great for a cool summer evening. I used cucumber as I didn't have zucchini on hand and it turned out surprisingly well. The dill smells so good while cooking and the garlic-yogurt sauce is the perfect complement. I'll definitely make this again. Thanks!
