Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

This is as it states AMAZING. I chopped up the mangos into the salsa.... the grilled veggies are a must!

Mexican Tinga

I love this! My husband said it was the best Mexican dish ever, even better then the restaurants. I slow cooked mine it came out so tender and juicy! I blended a can of diced tomatoes, about 3-4 chilies with all of the adobo sauce. I put that in the crock pot then added a can of chicken stock low sodium. I spiced it up a little with pepper, cumin, and diced Garlic. I sliced up half an onion and added that to the pot. then put the chicken in about 4 breasts then added a cinnamon stick. After it cooks for about 6 hours I took the chicken out and put it into a bowl and shred it, then i added some of the juices that it cooked in to my liking. (the more you add the spicier it is!) I made tacos, fried up some corn tortillas, added cheese and sour cream, I can't stop eating them!! Also served with Mexican rice.

Brazilian Black Bean Stew

I wanted something with black beans, and this caught my eye. My 1 year old loved it! My 3 year old loved the liquid and beans, but wouldn't touch the vegies. Got to love kids. I used chicken stock instead of water. No ham, chicken chorizo, and frozen mango. I loved it, thank you.

Cake Mix Cookies VIII

WOW!! I used Pillsbury Moist supreme chocolate devils food. I used the stick of butter 2 TBS. oil and a tsp Vanilla. I formed into a ball about 2 inch, then flattened them out a bit. Added some pecans on top and pressed them in. They remind me of brownies! The taste is AWESOME and the texture perfect! I cooked them at 350 for 8 min, then let them flatten out for a few minutes before putting them on a cooling rack. These are now my FAVORITE cookies. Thank YOU!

Very yummy, wish I had a bread bowl. I also used 1 1/2 tbls old bay, and skim milk instead of half and half. Also used 8oz im. crab. Hubby loved it!

Chantal's New York Cheesecake

WOW!!! My husband Loves this and so do I, and I am not a big cheesecake fan... Well I wasn't before this. the only thing I did was some of the suggestions on the crust. My crust came out a little soggy, so I am going to tweak it a little, and of course mine cracked, so I will lower the temp and cook longer in a water bath. Thank you so much for this recipe it was as my Hubby said "The best cheesecake I ever had!"

Spicy Maryland Crab Dip

This is an amazing Crab dip! Everyone loved it at my brother in laws party. It was gone in no time!!! I had to change a few things do to not having some stuff on hand. I used imitation crab, about 14 oz almost a pack and a half. I used monterey jack cheese instead of cheddar and I used about a cup or so. I didn't have any hot sauce, so I used about a tsp of cayenne pepper. No old bay seasoning so I ground up some celery seed maybe a tsp. Ground up some bay leaves about 3, Put some ground ginger, paprika, pepper, and lots of garlic and onion powder. I didn't have mustard powder so I used a tblsp mustard. I also only used 1 tblsp lemon juice. MAN, I didn't have a lot of stuff, hehe. Well it was absolutely amazing, and everyone loved it!!! Thank you.

Crab Stuffed Haddock

YUMMY!!! I used wheat bread, toasted it in the oven. Didn't have romano cheese used parmesan instead, and used immatation crab. Will eat weekly.

Shrimp Chowder

This was amazing!!!! I added an extra 2/3 cup milk, and I also cooked the potatoes in chicken broth before adding it. Then I used the whole pound of shrimp. I will be making this often.
