Blackberry Cobbler II

Loved the Pork Roast...5 Stars... But the veggies left more than just a bit to be desired...MINUS 1 star... Hubby wouldn't eat the veggies on a bet! But again, the roast wast juicy... tender... and delicious. I think next time I'll make the roast by itself and make other veggies separately and see how that comes out.

My-Hop Pancakes

Husband never said a word... just Hummed the whole time he was eating!! This is a definite keeper, :o) Wondering if you can keep the batter overnight, was a bit much for just two. If not, will just have to adjust recipe down a bit.

Amazing Italian Lemon Butter Chicken

This is great! Hard to find different ways of serving things that my hubby will eat, and he's asked for it again. I even made the sauce with bacon bits and capers and used it over Swai fish (fried like this recipe)... hubby loves that too!! So now I have 2 dishes from the same recipe. I'm one happy camper!! :o)

Brings back memories of my favorite recipe I had years ago. Doesn't seem to do too well with artificial sugar substitutes, but pretty good if you use at least 1/2 and 1/2.

Carrot Cake III

Great recipe. Instead of nuts, I added raisins. I am always looking for sweets for my husband to satisfy a sweet tooth without putting him in diabetic shock. To make the cake more diabetic friendly, cut back real sugar by half and add 1 cup artificial sweetener (splenda). I haven't found any way to reduce the confectioners sugar in frosting and keep the right flavor... but with this cake, you don't need a thick layer of icing. It's moist and has a great flavor without drowning it with icing. About a 1/4 inch is plenty to compliment with that rich cream cheese flavor.

Cheesy Potato Bread

Wow. I didn't have all the ingredients, but I took a chance and substituted splenda for the sugar and mozarella for the cheese. Even though it didn't rise as much as it should have (w/o the sugar) hubby couldn't get enough! He's already making suggestions for variations for the NEXT time. {Grins}
