Pineapple Upside-Down Cake VII

South African Yellow Rice

My husband is South African and had high hopes for this dish. Unfortunately, it ended up being just OK. With both sugar adn raisins, this ended up being way too sweet. I will try another recipe next time.

Javi's Really Real Mexican Ceviche

I am sure this would have been delicious ceviche, unfortunately, I followed the recipe as-is, and my seafood NEVER "cooked", not even overnight and I ended up wasting what would have been otherwise good seafood. You should cut the seafood pretty small, and/or let sit in the lime juice much longer before adding the other ingredients, and/or poach the seafood a little bit before adding. Either way, this was a major disappointment.

Roasted Red Pepper and Tomato Soup

This is a good recipe with great flavors although I think the recipe is little more complicated than it needs to be. Since you are pureeing the tomatos, I wouldn't bother with peeling them. Also, I didn't bother with the roux step, added all the peppers at the beginning,and used about half the hicken broth, pureed it all, and ended up with a rich and thick enough soup with much less fuss. Enjoy!

Sturdy Whipped Cream Frosting

This was a great recipe. I just think it needed a bit more sugar. I will definitely use it again. This time I used it to top chocolate cupcakes and it was sturdy enough to be piped on.

Baked Penne with Italian Sausage

This is a good basic recipe. I almost thought it was too basic until my husband couldn't stop raving about how much he loved it. Sold! I used hot italian sausage removed from the sausuage casing. I added garlic, onion, mushroom, and fresh basil. Delish!
