Single Cup Hot Buttered Rum

I don't like things too sweet so I skipped the confectioners sugar. All I had was butter pecan ice cream, which worked very well. It's perfect!!! Thanks!

Carrot and Raisin Salad II

This is a great recipe. I love the sour cream/mayo dressing. I used nonfat mayo and added come pineapple. It was a big hit.

Hearty Vegetable Lasagna

This is wonderful. I will definitely make this again. I added diced zucchini and stirred thawed frozen spinach in with the ricotta. Otherwise, I wouldn't change a thing.

Mom's Zucchini Bread

This is really good. That said, I think there is a little too much sugar. Next time I will check reviews to see if I can substitute or reduce the sugar. Also, I had to cook it about 70 minutes at 325. Very tasty and moist though. My family loved it.

Potato, Broccoli and Cheese Soup

Reviewed: Apr. 14, 2009
My husband and daughter both told me "this soup rocks!" and I agree. Great recipe. I did add the broccoli to the potatoes to skip a step, halved the onion, and I mashed with a potato masher instead of using a processor. That made it very quick and easy. Thanks!
