Caramel Heavenlies

The taste of this was very good but they are very messy! I cut them on diagonal and they did not look bad though. I put the marshmellows, coconut and nuts on top of the graham crackers then poured the brown sugar and butter mix over that and did not have any trouble with nuts or coconut falling off. These are a lot like Magic bars, Hello Dolly bars, Seven Layer bars (whatever you call them).

Pumpkin Breakfast Casserole

Made this for Christmas morning and it was a hit. Any pumpkin pie lover will go crazy for it. I did use french bread which I think makes it more special. I sprinkled the nuts over the top of the dish before baking it which toasted them nicely. It was even better the next morning warmed up! Some people may want to bump up the spices.

Pumpkin Pancakes

Really enjoyed this one! I used only 1 1/2 cups of white flour then added 1/2 cup of wheat germ. Also added a total of 5 Tbsp on brown sugar and 1 Tbsp of vanilla. After pouring the mix on the griddle, I sprinkled walnuts on top too.

Peach Cobbler Dump Cake II

This was okay. It makes me want to play round with the recipe and see what I can do. I will definitely double the number of peaches in the future. My cake part turned out kind of chewy but I did try using a low sugar cake mix so maybe that was it.

Crunchy Caramel Snack Mix

We enjoyed this for New Year's Eve. People said it was addicting and liked that it wasn't overly sweet. I added pretzel sticks which I think made a good addition. Next time I will leave out the Cheerios and add more popcorn and also my pretzel sticks.

Chocolate Rum Cake

With the addition of a chocolate ganache on the top, this rates five stars. I also made this in a 9X13 inch pan because I have trouble getting cakes out of pans (baked 40 minutes). Before baking I put the nuts and some coconut on top of the cake mix (instead of bottom). After baking, I let it cool then used the chocolate ganache recipe from this website. Oh yeah, I also added some chocolate chips to the cake before baking. The men at work really seemed to enjoy this cake.

Chocolate Scotcheroos

I did something wrong the and topping was a little weird but definitely double the amount of chocolate chips you use for the topping. Mine didn't stretch all the way across the top.

Pumpkin Chip Cookies

These were pretty good. I liked that they make a whole lot of cookies. I made half chocolate chip and half raisin. I may add a tsp of pumpkin pie spice next time.

No-Fuss Pumpkin Cake

Not sure what the fuss was about. I did not like the icing but then I don't like the store bought frostings so what was I thinking. I guess I was hoping the cream cheese would work miracles. If I ever make this again, I'd like to try adding about 1 1/2 cups of grated carrots to the mix! Maybe that and homemade icing would do the trick. It was a moist cake but I would like it to taste more of pumpkin. I brought it to work and it lasted an unheard of 3 days so was not very popular.

Butterscotch Bread Pudding

Although my family said this recipe was very good. I thought it was just OK, nothing exciting. I didn't really like the way my butterscotch chips did not really melt but remained lumps of sugary hardness so I would have liked it better without them. I did follow others instructions to decrease the sugar and am glad I did.

Overnight Coffee Cake

This recipe was an OK cinnamon coffee cake but nothing outstanding. I did add one very ripe banana to the cake part (to get rid of it) and liked the addition. I also added about 4 Tbsp of butter and 1/2 a cup of oats to the topping and liked that as well.

Chocolate Coconut Cake

I made this in one cake pan. I baked the cake for the time given for a 9X13 pan on the cake mix box. Then put the coconut filling on top of the baked cake. I put walnuts on top of that (I did not have almonds) then finished by pouring the glaze over the top. Next time, I will put about 1 cup of evaporated milk in the coconut filling instead of regular milk then decrease the evaporated milk and sugar in the chocolate glaze to make it thicker and less sweet.

Red Wine Pork

Yum! Yum! Yum! This turned out terrific! Very moist and tender. I didn't have any red wine so I used sherry. I also didn't have mushrooms so I just left them out. I cooked it with a cover although it didn't say to do so. Next time, I'll use foil as the lid got really dirty, Definately a keeper and I am not a big meat eater. I may use a variation of the recipe just for the carrots sometimes too.

Lemon Sorbet

This was pretty good. It was very light and refreshing but not a WOW. I did not read the directions and brought it to school to make without first cooking the syrup. The sugar sat in lemon juice over night and it was fine. I also forgot to look to see how many this served and was disappointed because it made very little. I would say it served 4. Everyone only got a couple of spoonfuls to try it. It is kind of like a frozen lemon shake up.

Easy, Eggless Strawberry Ice Cream

This recipe was fantastic. I had some frozen raspberries I really needed to use up so I used them instead. I also used 1% milk instead of whole and it was still very rich and creamy. I am going to use the recipe again very, very soon.

Garlic Butter

I used just dried garlic not garlic salt and did not add any salt and thought it was wonderful. I'll never buy store bought garlic bread again. I used 1/4 of the reciped and 1/2 a loaf of bread and it worked out great for 4 people. Of course, I also added mozerella cheese on top!
