Easy Quiche

Wow! How could something so easy taste so good. What a pleasant surprise. For those of us who are gluten free - this recipe conforms easily. I made the recipe as written but with Bisquick GF pancake mix. The flavors meld beautifully and the texture is perfect. If you like Quiche, try this. I used to make quiche in an amazing pie crust (my mom's recipe). I've missed that since going gluten free. Using this recipe, I don't even miss the old one.

Grilled Marinated Shrimp

My enormously picky fourteen-year-old son said this was the best shrimp he has ever had. I made the recipe as written. Everyone in my family loved it. I have made it several times now. I even served it over a salad. It helps if you use some of the marinade over the salad. You can set some aside or, if you have a skillet, try cooking it that way. Then the juices don't get lost. So good!

Homesteader Cornbread

This is exactly the recipe I have been looking for. Because I prefer the texture of my cornbread to be a little heavier than cake, I took the advice of the reviewers who suggested switching the amounts of cornmeal and all purpose flour. So I used 2 C of cornmeal and 1 1/2 flour. Baked it in a cast-iron skillet. No problems at all - Easy Peasy!! Hmm delish. I love it, and so does my family. Thanks for sharing.

Rosemary Braised Lamb Shanks

I made this recipe as written with two small exceptions, because It is hard to find lamb shanks in my area, I used butterfly leg of lamb cut into cubes. I braised the meat in two batches. Also, I used the other ingredients as listed including the fresh rosemary. Since I did not have fresh thyme on hand, I used dried. The first time I made this, my husband raved about it so much that he decided to make it again for guests. Our guests also enjoyed it. Before trying this recipe, we had never cooked lamb. Thank you for a very nice and easy recipe.

Roast Sticky Chicken-Rotisserie Style

I love love this recipe. I made this dish for a party where a lot of other food was served, including another chicken dish. I made a large portion of this, and all of it went. It was the first dish to be finished off. It's a real crowd pleaser, and my kids like it too!! For me that's a win-win. Thanks for sharing.

Alison's Gluten-Free Bread

Ok, those of us who are living gluten free know that a good bread is so hard to find. I really like this bread. It has a wonderfully springy texture that for once doesn't crumble or taste like I am eating a piece of rice shaped like bread. It does have a lot of ingredients, but it is worth the time to get them. I used my breadman bread maker and it worked like a charm. Go ahead, try it.

Butternut Squash with Onions and Pecans

This recipe was very good as is. I served it to a group of friends, and it was a hit. I made one very slight adjustment. For the sake of time, after a few minutes of cooking on the stove top, I transferred the squash and onion mixture to a cookie sheet and roasted it in a 400 degree oven. I did this so that it would cook faster because I was running late. I did everything else as stated in the recipe. I think it turned out delicious!

Chicken and Biscuit Casserole

This recipe was very easy to make and delicious. Obviously, not everyone will have the same spice and/or vegetable preferences, but it's so easy to use this basic recipe and swap out the specifics to suit your family's tastes. For my family, I went a little easy on the basil and added our favorite poultry seasoning. Just be sure to taste the chicken mixture before you pour it into the prepared baking dish. If it needs a little more flavor, add whatever suits you. Since I am gluten free, I used my own GF allpurpose flour in the chicken mixture, and gluten free cheddar biscuts (the recipe is on the Betty Crocker website.) It was ready to take from the oven after the initial 30 minutes. That may vary depending on the biscuits you choose to use. Our biscuits were done to perfection w/o the additional ten minutes of bake time.

Lentil Soup

Remarkably flavorful and satisfying! My husband and I just did a juice fast and were looking for some veggie-based dinner ideas. I followed the recipe using the ingredients as listed with the exception of spinach. I had none on hand so I had to use kale. Like others, I did adjust the ratios a little to suit our taste, i.e. more garlic and more veggies. For me, one hour was not quite long enough; it had to simmer about 1 1/2 hours. But I expect that from soup. It's not an exact science. I think this recipe is very versatile and forgiving. We can each adjust it easily to suit our personal preferences. Overall we were pleasantly surprised at how good this soup tastes and agree with other reviewers who said that balsamic vinegar really makes the difference. I tasted the soup before the vinegar - it was good, but after - Wow, really good! We both went back for seconds. This recipe is a keeper. Thanks for sharing, Marie:-)

Chicken Tortilla Soup I

I love, love, love this soup. I did add cumin as several reviewers suggested. And I do use chicken broth instead of water. Overall, though, I find this to be an amazingly versatile recipe. I have made alterations when I did not have the exact ingredients on hand. For example, I have used hominy instead of black beans. And I have even tried it with Goya pink beans. My suggestion is, stick to the recipe as much as possible. If there is an ingredient that you don't care for, make adjustments as you go. In my opinion, the toppings contribute a lot to the overall flavor. So don't omit them. Enjoy!!

Gluten-Free Moist Chocolate Cake

This cake is wonderful. It's very flavorful, moist, and rich but not too rich. Based on another reviewer's suggestion, I was careful to make sure I blended the quinoa thoroughly until I could no longer see any little quinoa pearls through the side of my blender. I don't have a lot of experience using different cocoa powders, but for this recipe I used "Ghiradelli". The result was a particularly delicious (IMO) chocolate flavor. I opted to go with the chocolate/raspberry combination that is shown in one of the photos. So I used Raspberry Polamer All Fruit between the layers and fresh Raspberries on top. It was so pretty and delicious. I served this to eight people, and everyone enjoyed it. I will make this again. Thank you so much for sharing.

No Bake Chocolate Oat Bars

These cookies are delicious. I made these recently during a short stay out of the country. The apartment we were renting did not have much as far as cooking utensils so I was pretty limited in what I could make. These no-bake cookies were about the easiest recipe I could find. Since there were no baking pans, I made do with a plastic tray lined with was paper. I could not find quick oats, so I used regular oats and just simmered them a little longer with the sugar and butter mixture. I did add a little almond milk to soften them up a bit. Fortunately the almond flavor complemented the recipe nicely. The end result was delicious. This recipe is not too complicated and very forgiving. The end result was a delicious cookie that everyone in our group enjoyed. Thanks for sharing.

Gluten Free Danish

I liked these danishes. They were good w/o being too sweet. I think they are perfect to have with a cup of coffee or tea. From my experience, the consistency varies depending on the gf mix used. Some mixes absorb more liquid than others and that definitely affects the ratio of ingredients. I used Bisquick gf mix, and had to add a little more milk. The texture of mine was similar (not exactly) to the biscuits that they serve at red lobster. That makes me think, they might also work with cheese and other spices for a variation. Overall, I was very happy with them, and so was my family who do not even eat gluten free. Thank you for posting.

Slow Cooker Latin Chicken
