Apple-Raisin French Toast Casserole

I made this over the weekend using some leftover oatmeal bread. I also followed the advice of others and cut WAY back on the butter (for the half-recipe I made, I used 2 tablespoons). I also put the apple-raisin mixture on top of the bread to allow any extra juicy yumminess to soak down into the bread. It turned out REALLY GOOD! A great cross between baked oatmeal and french toast, and certainly a perfect way to start a brisk day. My husband and son are already asking me to make it again. :)

Bread Machine Pizza Dough

This is a great dough!! Based on some of the other reviews, I added about a tsp of dried basil and 1/2 tsp garlic powder. The crust was soft, but not too thick and just the right amount of flavor. Definitely my new go-to pizza crust!

Unbelievable Spinach Calzones

Filling is a little bland but a good, flavorful dipping sauce helps. Next time I'll try adding some red pepper flakes to it. Also recommend brushing them with olive oil before baking for a nice brown crust.

Cinnamon Griddle Cakes

Wonderful!! And perfect mood-lifter for a cold gray day. I left out the corn syrup and added the extra tbsp milk, as others suggested. They were good but could have used just a twinge more sweetness. Next time I will try using honey to replace the CS. I did not make the frosting; that just seemed like too much to me.

This is AMAZING!! And it's cute to use red and green apples but get the tartest ones you can find. The sweet PB and chocolate balance the tart apples (sweet apples are too much).

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

Really good!! The sauce is just spicy enough (which was surprising to me) and the pepperjack totally makes it. I wasn't sure about the bacon but it gives that nice salty edge. If you've got leftover cooked chicken in the freezer this is a fantastic quick and easy supper after a long day.
