Buffalo Chicken Dip

This dip tastes great. I added about a 1/3 cup of ketchup to sweeten it up a bit. Really easy to make too.

Curried Chicken Tea Sandwiches

Fiesta Stuffed Peppers

These were good. I followed the directions exactly. I used the taco seasoning from this site. I stuffed yellow green and red peppers, and the green ones tasted the best. The recipe made way too much, next time I will cut in 1/2, or even less.

Banana Crumb Muffins

The first time I made these they were a little dry. I didn't mix the ingredients exactly as suggested and realized too late. I will try again and follow to the T, with hopes for moister muffins. (edit) tried these again today and they turned out perfect. I used 4 smaller bananas, and made 10 large muffins. They disappeared fast! As my bananas are starting to turn brown I toss them in the freezer (just as they are) and have them on hand for recipes like this one.

Raspberry and Almond Shortbread Thumbprints

This cookies weren't too difficult to make. Some turned out picture perfect, others cracked a little and the jam melted out. I wasn't a personal fan of the almond extract but they did go quickly with the rest of my family and guests.

Boilermaker Tailgate Chili

Yesterday was my first time making Chili and this recipe was exceptionally easy and delicious. I made it for a work fund raiser and the whole pot was gone before I knew it. It wasn't that spicy. I was short a can of chili beans and forgot to buy a red pepper, otherwise followed the recipe. I will make it again. Update: tried doubling the recipe but it was way too much for my crock put to handle. will have to remember to do just one batch at a time!

Eggs Benedict

This was my first time making eggs benedict. I thought it would be a nice treat for Christmas morning. It was a simple recipe to follow and turned out delicious. I might cut back the lemon juice a little next time, but just by a bit.

Jenn's Out Of This World Spaghetti and Meatballs

I made this for my god childrens christmas dinner. By the time we all see each other this time of year, everyone is Turkey'd out. Everyone loved it. My husband said it was even better than my moms spaghetti. The only thing I changed was I used a combo package of meat that the butcher had made with beef, pork and sausage, rather than just the ground beef. I also doubled the batch, however ran out of room in my pot, had to use a second pot and then didn't have a big enough pot left over to cook the noodles. I called a friend over to bring a pot and she begged for me to return the clean pot filled with sauce. It was a good compromise and a good sign that the sauce was "out of this world"!

Carrot Cake III

This cake turned out amazing. This was my first time making it (or any carrot cake for that matter) so i followed the recipe to a T. The only think I skipped was putting the nuts into the icing. I made it for a work potluck. My new manager informed me that he "hates" carrot cake (lost points for that one) but then he said this cake was AMAZING- he even stopped talking (a first) while he devoured it. So it gets 5 starts. Easy enough directions to follow, simple ingredients & tastes great.

Banana Sour Cream Bread

My first time making banana bread... it is delicious. It's soft a tasty in the middle and the top has a wonderful crust. I used the fat free sour cream, as I always buy low fat if it's available and still thought this bread was amazing. The only problem was that I didn't realize it makes four loaves and my mixer isn't large enough so I had to split it up half way through.. this resulted in 2 loafs of banana nut (with the optional walnuts) and 2 loaves chocolate chip. Next time I will halve the recipe for simplicity of mixing in one bowl.

Classic Bran Muffins

These muffins are delicious, way better than any other bran muffin I've ever had. I didn't have buttermilk, or know what that is for that matter, but read somewhere to take a Tbls of white vinegar and mix with a cup of milk and let stand 10 minutes. Instead of raisins I folded in a handful of blueberries and raspberries.
