Banana Prune Muffins

This was easy to make, whipped it up all by hand. Stuck to recipe with the exception of adding 2oz. of walnut pieces with the diced prunes. Used PAM No-Stick Cooking Spray with a dusting of flour on bottom of loaf pans, baked for 25 mins, cooled for a few mins and then turned loaf pan over onto cookie sheet. Loafs are moist, not too sweet but very yummy with the prunes and added crunch of the walnuts. We sliced into the warm loafs, added butter to our pieces and were delighted.

My Crab Cakes

1st time for me to make crab cakes from scratch. Used recipe as a guide and the cakes turned out delicious. I did have to substitute what was on on hand for some of the ingrediants: Club crackers instead of buttery round Prepared mustard for dry Italian seasoned bread crumbs Real chopped garlic instead of garlic powder

Mexican Cornbread II

I greased and preheated a black iron skillet in oven for 7 minutes before pouring in mixture. I used cheddar/jack cheese with a tablespoon of diced jalapenos as that's what I had on hand, decreased corn to 1/2 can because I was using a 7oz package of cornbread mix instead of 8.5 (last time I used a full can with the 7oz package and thought bread was a tad bit too moist)
