Cioppino

Reviewed: Feb. 14, 2013
I love this recipe! I have made it several times and each time it is better and better. It is our Christmas tradition if we can find all the fish. The only thing I have done to really enhance the flavor is I used my frozen garden tomatoes in this soup. They are so flavorful and all you have to do is rinse the tomatoes under water and peel the skin off and chop. The skin is tough on frozen tomatoes but the summer flavor is still there. I used a garlic press for the garlic so you don't get big chunks of garlic. I like it with a little heat so upped the pepper flakes a little bit. Thank you for this recipe. It is perfect for company or just family.

Italian Dressing Mix

Reviewed: Jan. 28, 2013
I just made this mix and my husband loved it. I am not going to buy salad dressings anymore because you don't know what is in them. I didn't use garlic salt but just garlic powder because my husband has high blood pressure. I only used 1 tbs of salt. I used 1/3 cup of olive oil and 1/3 cup of canola oil, I used the white vinegar but also added about 1/4 cup of basalmic vinegar. It is really good and will have this be my go to italian salad dressing!

Restaurant Style Beef and Broccoli

Reviewed: Dec. 13, 2012
I made this last night for the first time. It was super delicious and easy! I used flat iron steak that I cut super thin and marinated over night. I flash cooked the steak strips in my wok(used peanut oil) and then removed from the wok and then cooked broccoli, rest of ingredients and scallion onion, then added the steak back in just to heat up. I served with fried rice and was better than any take out!

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Mar. 7, 2012
I have made this twice for a potluck group. They love it and come back for seconds. I use a prepared Rotissere chicken, add sauted onion, garlic, jalpeno pepper, can green diced chiles to the green chile sauce. It gives it more flavor. I make it the night before and just heat it up.

Gingerbread Boys

Reviewed: Dec. 13, 2011
I think these are delicious! I used molassas instead of corn syrup and doubled all the spices. I mixed the dry ingredients together in a separate bowl and then added to the wet. I found them a little hard to roll out, but just have to work it slowly! I brought them to a party and everyone loved them. I did not add the orange because I don't like orange. I will make them again and try to make sheets and make a house!

Baked Eggplant Parmesan

Reviewed: Oct. 3, 2011
I have made this recipe several times and this is what I have learned. I need 4 eggs by the time I am done and I do what others did, I bake it 10 minutes on each side. I love this recipe and think it is even better to make a day ahead. It is very important to slice the egg plant very thin. Great dish!

Baklava

Reviewed: Sep. 26, 2011
I made this for the first time for a public event that was about local honey. It was delicious! I had never made it before and read all the reviews prior. I made 1 1/2 times sauce a few hours ahead, and put in frig. I used 1 1/2 c honey and less water. Roasted the nuts(used walnuts and pecans)and mixed in sugar and cinnamin and added a little sauce too. It made a 9x12 pan and an 8x8 pan. I used less than half the butter, I quickly brushed the phillo dough. I didn't need a damp towel or anything. It was super simple, cut it half through before cooking. I poured sauce and let it set over night! Not one piece was left and there were tons of desserts. Everyone thought I had made it tons and loved it. So thanks for the recipe!

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 14, 2011
I made this last year(2010) for the first time and my company loved it! I used it for the main meal and then sandwiches for left overs. I took the juice out and strained and then steamed the cabbage separately. Easy and delicious. Will be making it again this year!

Marrakesh Vegetable Curry

Reviewed: Oct. 25, 2010
I thought this was a very good curry dish. I read the other reviews and doubled all spices except cinnamin and salt. I will double the cinnamin next time! My husband is not a big fan of curry but he liked this alot! I served it with whole wheat couscous and Nann bread. It makes alot and I also added firm tofu for protein. I used carrot juice instead of orange juice and grated in about a tablespoon of fresh ginger. The heat was not enough for me, I even added extra cayenne. The flavor overall was really tasty!

Squash Casserole I

Reviewed: Oct. 1, 2009
I have been making a casserole like for years. I steam and mash the squash. I saute cristini mushrooms, onion, garlic, jalapeno peppers and add a small can of diced chilis. I then add the squash with an egg, add cheddar cheese and mix in the vegetables. I use a nonstick spray on my 8x8 pan, top with more cheese and back until brown. It is really good!

Chili Rellenos Casserole

Reviewed: Sep. 25, 2009
I have been making a recipe similar to this one for years. I use fresh anaheim peppers from my garden and char them and peel them. I put corn tortillas on the bottom of my pan and then layer the chili's and cheese. I saute up mushrooms, onions, garlic and jalapeno pepper and put that inside the chili's. I put the marinara sauce right over the chili's and cheese, pour egg mixture and put more cheese.

Sweet And Sour Glazed Chicken

Reviewed: Sep. 11, 2009
I have been making this recipe for years but I have changed it up myself. I use canned chunky pineapple and omit the onion soup mix. I marinate the night before and it is even better. It is a crowd pleaser and very easy! I also add pineapple juice if I have some along with the Russian salad dressing.
