Quick and Easy Green Chile Chicken Enchilada Casserole

I have made this twice for a potluck group. They love it and come back for seconds. I use a prepared Rotissere chicken, add sauted onion, garlic, jalpeno pepper, can green diced chiles to the green chile sauce. It gives it more flavor. I make it the night before and just heat it up.

Gingerbread Boys

I think these are delicious! I used molassas instead of corn syrup and doubled all the spices. I mixed the dry ingredients together in a separate bowl and then added to the wet. I found them a little hard to roll out, but just have to work it slowly! I brought them to a party and everyone loved them. I did not add the orange because I don't like orange. I will make them again and try to make sheets and make a house!

Baked Eggplant Parmesan

I have made this recipe several times and this is what I have learned. I need 4 eggs by the time I am done and I do what others did, I bake it 10 minutes on each side. I love this recipe and think it is even better to make a day ahead. It is very important to slice the egg plant very thin. Great dish!

Baklava

I made this for the first time for a public event that was about local honey. It was delicious! I had never made it before and read all the reviews prior. I made 1 1/2 times sauce a few hours ahead, and put in frig. I used 1 1/2 c honey and less water. Roasted the nuts(used walnuts and pecans)and mixed in sugar and cinnamin and added a little sauce too. It made a 9x12 pan and an 8x8 pan. I used less than half the butter, I quickly brushed the phillo dough. I didn't need a damp towel or anything. It was super simple, cut it half through before cooking. I poured sauce and let it set over night! Not one piece was left and there were tons of desserts. Everyone thought I had made it tons and loved it. So thanks for the recipe!

Slow Cooked Corned Beef for Sandwiches

I made this last year(2010) for the first time and my company loved it! I used it for the main meal and then sandwiches for left overs. I took the juice out and strained and then steamed the cabbage separately. Easy and delicious. Will be making it again this year!

Marrakesh Vegetable Curry

I thought this was a very good curry dish. I read the other reviews and doubled all spices except cinnamin and salt. I will double the cinnamin next time! My husband is not a big fan of curry but he liked this alot! I served it with whole wheat couscous and Nann bread. It makes alot and I also added firm tofu for protein. I used carrot juice instead of orange juice and grated in about a tablespoon of fresh ginger. The heat was not enough for me, I even added extra cayenne. The flavor overall was really tasty!

Shrimp Scampi V

I made this and it was delicious! I used shallots for the onions and used my garlic press for the garlic. I served it with rice pilaf instead of pasta. It was a huge hit and have made is several times!

Squash Casserole I

I have been making a casserole like for years. I steam and mash the squash. I saute cristini mushrooms, onion, garlic, jalapeno peppers and add a small can of diced chilis. I then add the squash with an egg, add cheddar cheese and mix in the vegetables. I use a nonstick spray on my 8x8 pan, top with more cheese and back until brown. It is really good!

Chili Rellenos Casserole

I have been making a recipe similar to this one for years. I use fresh anaheim peppers from my garden and char them and peel them. I put corn tortillas on the bottom of my pan and then layer the chili's and cheese. I saute up mushrooms, onions, garlic and jalapeno pepper and put that inside the chili's. I put the marinara sauce right over the chili's and cheese, pour egg mixture and put more cheese.

Sweet And Sour Glazed Chicken

I have been making this recipe for years but I have changed it up myself. I use canned chunky pineapple and omit the onion soup mix. I marinate the night before and it is even better. It is a crowd pleaser and very easy! I also add pineapple juice if I have some along with the Russian salad dressing.
