Beaker's Vegetable Barley Soup
I love this recipe! What a hearty, filling soup. I altered the recipe a tad for my liking, adding two diced potatoes and subbing out the Worcestershire for balsamic vinegar so the recipe would stay vegan. I also added 1 tsp of red pepper flakes to add spice. And instead of using two carrots or celery sticks, I used four large carrots, sliced, and an entire stalk of celery. I also sauteed the celery and onion in the bottom of the pot before adding the rest of the ingredients. Like a lot of the other reviews, I also found the soup extremely thick, so if you're looking for something more broth-y, either add an extra half quart of broth (or water) or sub out some of the barley. Also, this makes way more than 8 servings - I'm going to be eating it all week. Five star recipe! I can't wait to experiment with it.

Grilled Chicken and Portobello Lasagna Rollups
This recipe was very delicious! I did make a few mistakes though, and I hope by sharing them it will help others out.. First, I should have chopped my ingredients previous to starting the cooking - I used fresh spinach, mushrooms, and a frozen chicken breast I had to defrost and cook. I started boiling the lasagna noodles far too early so by the time I actually made the rolls, they were sticking together and some were ripped. The next mistake I made was doing the mushrooms separate - my boyfriend doesn't eat them, so I decided to add them to only a few rollups for myself, but the mushroom quantity ratio to the other ingredients was overpowering so they didn't turn out so well. Also, the recipe says to boil 18 noodles and it makes 9 servings. I'm not sure if it's just me, but I could only fit 12 rollups in my 9x13 glass pan. I made them by having the noodle flat, adding filling along the middle, and rolling it up so it was layered (kind of) and very fat! If it is supposed to be done another way please let me know! I think the best part of this recipe was the combination of tomato and alfredo sauces with all the cheeses - absolutely delicious! Hope this helps!

Baked Ziti II
As an inexperienced cook, I found this recipe super easy to make and it was DELICIOUS!! I used four cheese spaghetti sauce so it was extra-cheesy. I didn't follow the instructions fully though, I kind of just mixed everything together and put it in a casserole dish, and smothered the top with mozzarella and marble cheese, baking uncovered.. I was worried it would be dried out, but it wasn't. Also, ziti pasta was totally impossible to find, so I used rigatoni and it still tasted great. I think you could probably use any pasta and have it taste great! It's a deliciously cheesy dish and very easy to make, and keeps well overnight... Highly recommended!
