Chicken and Bacon Shish Kabobs

we made these last night and I have to say...absolutely fabulous. I wasn't too certain about the combination, but it worked, and worked perfectly. The chicken was tender and moist, due in part I think to it having bacon wrapped around it, the mushrooms added a nice flavor/texture contrast and the pineapple added just the right amount of sweet. We all decided that this is going to be a summer time staple. I didn't change a thing in the recipe, followed it exactly as written and thought it was perfect....when you try these, don't change a thing!

Hot Pizza Dip

Made this for Superbowl Sunday. I did as others suggested and put it together the night before. I also baked in the oven instead of the microwave. I have to say, this was a HUGE hit. Everyone loved it, said it tasted just like pizza and was definitely a "keeper". I think the best thing about this recipe, is you can completely customize the "toppings". I omitted the olives and bell pepper, and used only pepperoni. Next time, I will change it up and use sausage, pepperoni, and some of our other favorites. I highly recommend making this.....if you like pizza, you will love this. Also served this with pita chips. Perfect!

Blackberry Barbecued Pork Tenderloin

I made this for dinner tonight. I made a few cooking changes, but followed the recipe as created. I live in Michigan, Christmas Eve is not the best night of the year to grill anything. So instead, I put together the marinade, and place the meat and the marinade in a bag and placed in the refrigerator for several hours. Placed on a roasting pan, coated w/non stick cooking spray, and roasted at 350* for until internal temp reached 170 ~ about 2 hours. I made some additional marinade and basted twice during the roasting time. This seared the meat nicely and kept it moist and juicy. Everyone raved over it and agreed that it needs to be made again next year for our dinner. What a perfectly wonderful recipe. Thank you so much for sharing with us.

Smothered Green Beans

Made this tonight to go along with my Christmas Eve dinner. What a HUGE hit it was. Everyone absolutely loved it. Didn't change a thing in the recipe (which is slightly unusual for me) and it was just perfect. Will be making this again. Thanks for sharing the recipe with us.

Pumpkin Chip Muffins

I just made these to take to a womens' bible study meeting. They are fabulous! I made them exactly as the recipe was written. Yes, it does seem like a lot of oil, but they are so moist and so good. The only thing I did different was to make them in mini-muffin tins. I cut the bake time down to 14 minutes and turned the heat down to 375. These are a keeper. I may put some up in the freezer as well. Enjoy....

Easy Sausage Stuffing

This is by far the absolute best stuffing I've ever had. I am not a huge fan of stuffing in general, but this turned out nice and moist. I did follow the suggestions of others, and added about a 1/2 c extra broth. Easy to put together as well. I did brown up the sausage first, and then drained off the fat. I put it back in the skillet with the onion and celery, and heated through til celery was soft and onion clear. I will definitely be making this again.

Quick and Easy Mexican Chicken

Followed the recipe as stated for ingredients, the only change i made was not browning the chicken first. I put everything in a casserole dish, and baked in the oven for 35 minutes. Added the cheese on top and cooked for an additional 12 minutes. Served this over rice (brown and white). Was amazingly easy and delicious. Kids raved and asked for it again. Definitely a keeper!

Blueberry Zucchini Bread

I made this as a treat to bring to church, and I have to say, this was a HUGE success. I followed the recipe exactly, making not a single change. It was perfect. Moist, flavorful, easy to make. I will say for my personal tastes, I think the next time I make this, I am going to add chopped walnuts to it. I used fresh blueberries and fresh zucchini (both from the farmers market just that morning). Seriously, this is probably one of the easiest and tasty recipes I've made in a long time. I really recommend trying it. Oh, and it was a huge hit at church!

Ultimate Potato Soup

1/6/2010: made this again tonight, and each time i make this, I like it more. I didn't have any half and half so I used 2 cups whole milk and 2 cups of 2% milk. It was still fabulous, and I'm guessing a lot kinder on the calories. Sprinkle a little cheese on the top, served with garlic toast and this is one perfect winter meal!!!! This was the best soup ever. Like everyone else, I made a few changes, but stayed with the basic recipe given. I added in some bacon and garnished with garlic croutons. Everyone had seconds. A "keeper" as my nine year old told me.

California Tortilla Pizzas

These were amazing! I loved the fact that they were nice and crispy and still low in calories. I followed the recommendation of another reviewer and sprayed my tortillas with an olive oil spray. I also added some minced garlic to the vegetables as I was cooking them. I topped these with an Italian cheese blend and a little bit of parmesan...they were a huge hit! Even from my non-veggie loving son. I served these with a nice side salad. Perfect lunch or light dinner meal. Definitely give it a try..it's a keeper here in our house.

Southwest Chicken

This was fabulous. I made this tonight for our dinner and served it with white rice. To be fair, I did do a few things different, but kept the intent of the recipe. I sauteed some chopped onion and garlic with the chicken while browning. Used petite diced tomatoes, and then chopped some jalapenos added those along with the black beans and the corn. I served it on a bed of rice along with crushed tortilla chips, shredded cheese and sour cream. Everyone agreed this was a keeper! I'll be making this again.

Easy Corn Chowder II

This was absolutely amazing. I doubled up the corn and the milk, but left everything else the same. Served this with some homemade yeast rolls and a side Cesar salad. It was a hit. I've already shared this recipe with one of my friends. Will be one of the new staples for fall/winter cooking. Thanks for sharing with us!!!

Bacon-Wrapped Asparagus

I actually got this recipe from a friend and tried it right away last night. My entire family LOVED it. And like one of the other reviewers said, anything wrapped in bacon has to be good. My 10 yo son who absolutely detests asparagus, but loves bacon, had seconds. I used a grill tray, coated in EVOO, placed the wrapped asparagus in that, sprinkled garlic salt and pepper. Served it with grilled boneless country style pork ribs, corn, and a tossed salad.

Baked Potato Soup

I made this tonight since I couldn't find my other loaded baked potato soup recipe. Was quick and easy to make and had all the ingredients on hand. This was quite good...much lighter than I expected it to be, but big on flavor.

Tortilla Pinwheels

I made these for a Christmas party this past weekend. They were easy enough to make, but like other reviewers, didn't feel as though there was enough cream cheese (and that was even using only 8" diameter tortillas). I used toothpicks to keep them together, and think that if there had been more cream cheese, things would have "stuck" better. I am going to be trying these again along with a few modifications. Think I will definitely use a garlic & herb cream cheese and play with the fillings. I'm a big fan of anything you can put together ahead of time and let sit. These, you can definitely do that with. Then just slice them up and arrange them on the tray when you are ready to go.

Homestyle Meatloaf

I made this for dinner tonight, and what a hit it was. I used one of the recommendations, and did 1/2 of the oats and then 1/2 of chicken stuffing. It was perfect. Very moist, held together well when taking it out of the pan and when slicing. I think that this will be our family's new meatloaf recipe. Thanks for sharing it with us!

Steff's Shepherd Pie

This was good. The reason for 3 stars is I think it actually needed just a little bit of seasoning. I followed the recipe exactly as given. Next time, I think I will cut down on the onion, add in some ground pepper and a little garlic salt, plus a little more cheese. And on a side note, this is really a cottage pie since it uses ground beef instead of ground lamb. I recommend the recipe, it's really good ... thank you for sharing with us.

Hash Brown and Egg Casserole

I made this exactly as the recipe was written. My family all liked it well enough. I thought it was terribly dry. I think if I make it again, I'll add more eggs and more milk. Possibly less potatoes as well.
